Origins of Kashmiri Cuisine The history of modern Kashmiri cuisine can be traced back to the 15th-century invasion of India by Timur, founder of the Timurid Empire in and around modern-day Iran and Central Asia, and the migration of more than 1700 skilled woodcarvers, weavers, architects, calligraphers and cooks from Samarkand to the valley of Kashmir. The descendants of these cooks, the Wazas, were the master chefs of Kashmir. The two fundamental influences on Kashmiri cuis...ine are that of Kashmiri Pandits and Kashmiri Muslims with several overlapping similarities. The Kashmiri cuisines both vegetarian and some exquisite non-vegetarian dishes are mostly influenced by the traditional cuisines of the Kashmiri Hindu and the Mughlai cuisines having noticeable similarities to the styles of neighboring regions like Afghanistan, Persia and Central Asia.
