Saucy Ballers are ready to roll outta here. They freeze well and can be eaten on their own or with pasta. They’re like a hug in a bowl. They are headed to the @ehcw1 and will help nourish some moms and their families over this Mother’s Day weekend. Grateful to be part of this incredible initiative with some beautiful mammas! RECIPE: Meatballs 1 lb ground beef 1 celery ... 1 carrot 1 onion 2 cloves garlic 1 cup spinach 1 tsp salt 1 tsp black pepper 1 tsp Cajun spice 1 tsp dried oregano 1 cup bread crumbs 2 eggs 1/2 cup of Parmesan Sauce 1 jar of puréed tomatoes 1 medium yellow onion chopped 2 large cloves garlic minced 2 tablespoons extra-virgin olive oil 1 teaspoon dried oregano Basil leaves Salt, to taste Directions: Meatballs Chop up veggies and place in a food processor until finely chopped. In a large bowl combine beef, eggs, veggies, Parmigiano, oregano and bread crumbs. It works well to squish the mixture with your hands. Form mixture into balls (use and ice cream scoop to help guide you with size). Place them on a baking sheet lined with parchment paper and bake at 400 for 30 mins. Sauce: Finely dice onions and garlic and soften in a pan with olive oil. Add your tomato purée and add friend oregano and basil. Simmer your marinara sauce for about 20 minutes, or until it is your desired consistency. Once meatballs are cooked through, add to the sauce. Simmer together and serve with cooked pasta or in a bowl on their own. Buon Appetito!

Just winging it these days. Aren’t we all?! These sticky wings hit all the marks. Crispy, sticky, sweet, savoury...oh so good...and also super easy! Take 1lbs of wings, toss in corn starch and Cajun spice. Once coated, place on baking sheet lined with parchment paper. Bake in oven at 450 for 30 mins. While baking, make sauce. 1 thumb-sized piece of ginger peeled and minced 1 tbsp sweet chilli sauce 2 tbsp maple syrup 4 tbsp brown sugar... 5 tbsp dark soy sauce 2 cloves garlic peeled and minced. Whisk together and place in pot, bring to a simmer. Take off heat. Once wings are done, toss wings in sauce. Serve with veggies and dinner is served! Enjoy! See more

Today we eat fish. Need some help with what to make tonight. Super simple fresh tomato sauce with shrimp. Not a seafood fan, don’t add it because this sauce is delish sans. Head over to IG stories for more info. On another note, Happy Easter weekend all! Eat well, stay well and be well.

Bring the fine dining experience home. Break out your fine china, pop some bubbly, gather your isolation buddies and enjoy a beautiful meal together. This was our anniversary meal last night, consisting of Chicken Saltimbocca, with sautéed mushrooms and onion in a white wine sauce with a side of herb and parmigiano orzo pasta. For the Chicken: butterfly chicken breasts, season chicken with salt, pepper and Cajun spice. Place cheese (whatever you have on hand) in the m...iddle of the butterflied breast with some chopped up herbs-(I used parsley). Wrap the chicken with prosciutto. Heat up a pan with olive oil and brown each side of the chicken. Once browned, place chicken in oven safe casserole dish. In the same pan you browned the chicken, add sliced onion, mushrooms and garlic. Salt and pepper and add a cup of white wine. Once everything is softened, take off heat and pour everything over the chicken. Place in preheated oven (400 degrees), uncovered, and bake for 30 mins. Buon Appetito! See more
