Hello #sundayafternoon. Feeling like a having a refreshing and nutritious smoothie? Let’s check this recipe by @fortheloveoffoodandlife {RECIPE } Blueberry banana smoothie - 3 portions. .... What’s your favourite (smoothie) colour? Mine: or . . . The boys and I enjoyed this refreshing treat and I made it late enough in the morning that I didn’t feel so hungry when lunch came around. I might even be making it again today. . . 1 1/2 cups coconut milk 1 1/2 cups frozen blueberries 2 bananas 2 tbsp peanut butter 2 tbsp chia seeds 2 cups crushed ice 2 tbsp vanilla protein powder . . . Add all ingredients to your blender. Add more coconut milk if needed (in ingredients aren’t combining). . . . . Enjoy! Beautiful LemonBlueberry Cake by the dedicated and amazing @fortheloveoffoodandlife Thank you for the tag - Here is the recipe @fortheloveoffoodandlife RECIPE: Lemon Blueberry Cake .... . Light with just the right amount of citrus and berries. You can use fresh or frozen berries. This was supposed to be a loaf so if you decide to make it in a loaf pan, you need to add 10 minutes more to the baking time. . 1 cup sugar 1 cup sour cream cup canola or vegetable oil 2 eggs 2 tsp vanilla zest from one lemon Juice from lemon 2 cups flour 2 tsp baking powder teaspoon salt 1 cup frozen or fresh blueberries For the glaze: 1/4 cup icing sugar Juice from the other half of the lemon Preheat the oven to 350F (325F for convection baking). Combine all of the first ingredients using a mixer on medium high speed. Stir the flour, baking powder and salt in a bowl and add it to the wet mixture. Stir in the frozen blueberries (no need to defrost, you may have to cook 5 min longer to compensate). Be careful not to over stir or your batter will turn purple. If you are using fresh blueberries, shake them in flour first so that they don’t sink to the bottom. Pour batter into an oiled bundt pan or loaf pan. Bake for 60 minutes. Add 10 minutes for a loaf pan. Remove from heat and let cook. Combine the icing sugar and juice from the other half of the lemon using a fork. Drizzle over cake and let it harden. Why not add frozen fruit to it? That’s what I did with this easy banana chocolate chip cake. Oh and I also added a whole overripe pear we had in the fridge too. No matter what you do, this cake is going to be awesome because of those sweet bananas. . What fruit would you add? Please comment with your favourite fruit emoji to help me keep the recipes coming. . . Ingredients 2 eggs cup sugar cup oil 1 tsp vanilla 1 cup mashed ripe bananas 1 cup frozen sour blueberries (you can use strawberries, cherries, etc..) 1/2 tsp baking soda tsp salt 1 cups flour tsp ground cinnamon 1/2 tsp baking powder 1 overripe pear, chopped into small pieces or cup unsweetened applesauce (you can skip this if you want, cake will not be as moist) cup mini chocolate chips . . Preparation Preheat oven to 375F. Beat eggs, sugar and oil with a mixer on high. Add vanilla and mashed bananas and combine with mixer on low. Stir together the flour, baking soda, baking powder, salt and cinnamon in a bowl. Add to the wet mixture and combine until ingredients have merged. Add chocolate chips and pear. Stir with a wooden spoon. Add berries at the end so that the batter doesn’t become purple. Mix minimally. This time I poured half my batter into my pan and then spread the berries over it followed by the other half of the batter. I didn’t want too much motion going on. It still turned out awesome. Oil and lightly flour the bottom of a bundt pan. Sprinkle a dusting of flour at the bottom of the pan. You can use shortening if you want too. Pour batter into pan and bake for 40-45 min or until a metal skewer inserted in the cake comes out clean. Remove from heat and from the pan. Please take a look and try @fortheloveoffoodandlife baking ideas specially in these times Seriously one of my faves. I’m testing my previous recipes just to make sure they turn out amazing for you too! So easy and you probably have all of the ingredients on hand. Banana Blueberry Oatmeal Chocolate Chip Muffins .... . Blend the following ingredients on high setting of your mixer: 2 eggs 2-3 bananas 1 cup sugar (I cut and used cup) cup oil 1 tsp vanilla . . Add the next ingredients and mix using a spatula by hand or using the lowest setting of your mixer: 1 cup flour 2 cups quick oats 1 tsp baking soda 1 tsp baking powder tsp salt . . Add the last ingredients and just mix until combined so the bluberries don’t make everything change colour: 1 cup frozen blueberries (mine were still a bit frozen) cup chocolate chips . . Scoop into muffin liners (silicone or paper) and bake in an oven preheated to 350F Keep an eye on the time. I baked about 22 min but check to see if baked before removing from oven. #fridayvibes Recipe by The great @culinaryboss . CRUST 1 cup packed pitted @ndmedjooldates ... 1 cup raw mixed nuts, I used @royal_nuts . . FILLING 1 1/2 cups raw cashews (soaked over night is best) from @wholefoods 1 large lemon (juiced) 1/3 cup coconut oil (melted) 2/3 cup full-fat coconut milk 1/2 cup agave nectar or maple syrup . . Topping (or the best part!!) 2 cups of @nudefruitcanada 1 -2 tsp of syrup or sugar (optional) . . Method: Crust: blend all ingredients together until a sticky meal is formed, press into the bottom of a cake pan or pie dish as evenly as you can to form a crust, no edges needed, just fill the bottom. . . Filling: Blend all ingredients together until smooth. Pour over crust. Freeze dessert for 2 hours. . . Topping: Simmer @nudefruitcanada Cherries for about 5 minutes, you can add a bit of syrup or sugar to taste. Top frozen dessert with Cherries. . See more

Serves 4: 1 1/4 cups shredded unsweetened coconut 4 large eggs 1/4 cup milk 1 teaspoon pure vanilla extract Four 1-inch-thick slices multigrain bread NudeFruit Compote: 3 cups of NudeFruit - Scrumptious Antioxidant Blend 3 Tbsp of Orange Juice 1/4 of ground cinnamon 1 tsp of brown sugar (or maple syrup) 2-3 cloves (optional) Mix eggs, milk and vanilla together in a wide medium sized bowl. Dip bread into egg mix, coating well. Dip into coconut flakes. On a medium sized skillet, cook French Toast until cooked through. Sprinkle on more coconut and add NudeFruit Compote! #healthyrecipes #nudefruitcanada #frozenfruits

MONDAY inspiration! Please try this delish berry explosion muffins recipe by the very talented @fortheloveoffoodandlife Berry Explosion Muffins 2 eggs cup sugar (they didn’t come out too sweet so you can use cups if you prefer sweeter) vegetable oil... 2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda teaspoon salt 1 teaspoon vanilla 2 cups @nudefruitcanada frozen berries (let them thaw out and drain fully) cup chocolate chips (optional) Heat oven to 350F convect bake. Combine eggs, sugar and oil using a whisk or on the high setting of your mixer. Add the remaining dry ingredients by hand or on your slow setting of the mixer. Add frozen fruit (and chocolate chips) at the end using a spatula and mix just until combined. Using a cookie scoop, place into silicone muffin liners. Bake for 25 minutes and allow to cool once done. These were quick and easy. The batter was a bit dense at first but the liquid from the fruit made it runnier. Make sure you don’t overmix the fruit or your batter will be purple (some kids might like that).
