Try this chlorophyll rich side meal or snack for blood health. Grilled Asparagus 4 servings... 3 cups Asparagus (woody ends trimmed) 1 1/2 tsps Extra Virgin Olive Oil 1/4 tsp Sea Salt (or more to taste) Directions: Preheat grill over medium-low heat. Toss asparagus in the olive oil. Place asparagus directly on the grill or on a grill mat. Grill for 10 to 12 minutes, rolling at the halfway point. Remove from grill and season with salt. Enjoy! No Grill: Roast in the oven instead at 425F (218C) for 12 to 15 minutes. Goes well with: Cilantro Chimchuri Ingredients (5 servings) 1/4 cup Red Wine Vinegar 1/2 cup Cilantro (thick stems removed) 2 tbsps Fresh Oregano (stems removed) 2 Garlic (cloves, minced) 1/4 cup Extra Virgin Olive Oil 1/2 tsp Sea Salt Directions: Add all ingredients to a food processor and blend until smooth. Occasionally scrape down the sides as needed. Transfer to a mason jar and enjoy as a condiment or marinade! Serve it with: Grilled meats or veggies, over avocado or in a salad. Make it Spicy: Add a chili pepper or red pepper flakes. Storage: Refrigerate in an airtight container up to one week, or freeze in an ice cube tray and transfer to a freezer-safe container up to 3 months. Serving Size: One serving is equal to approximately 2 tablespoons. Baked Sweet Potato with Walnuts A great side dish including healthy fats, carbohydrates and protein for the health of your blood cells. 2 servings... 2 Sweet Potato (medium sized, halved) 1 tsp Coconut Oil 1/3 cup Walnuts 1/4 tsp Sea Salt (Celtic or Himalayan) or your favorite herbal seasoning 1 tsp Nutritional Yeast (optional) Directions: Preheat the oven to 400F (204C) and line a baking sheet with parchment paper. Rub the sweet potatoes with oil and place cut side down. Bake for 35 to 40 minutes, until slightly caramelized and soft. Place the walnuts in the oven with the sweet potato during the remaining 8 minutes of cooking. Then remove, let cool slightly and roughly chop. Season the sweet potatoes with salt or your favorite spices. Top with chopped walnuts and nutritional yeast, if using. Enjoy! Leftovers Refrigerate in an airtight container for up to four days. Serving Size One serving is one medium sweet potato. Nut-Free Use sesame seeds or pumpkin seeds instead. More Flavor Add fresh herbs such as thyme on top.
