Here's what you'll need: 1/2 cup melted coconut oil 1/4 cup nut butter of choice (we used our hazelnut butter!) 2 tbsp cacao powder 2 tbsp focus fuel OR for a more relaxing treat, try our chocolate latte with ashwagandha! 2 tbsp yacon syrup Combine all of your ingredients in a bowl. Pour your mixture into your ice cube tray and set it in the freezer. Sicilian-Style Chicken Thighs Ingredients 1 tablespoon minced garlic teaspoon salt, divided ... 4 tablespoons extra-virgin olive oil, divided 1 teaspoon Italian seasoning teaspoon crushed red pepper 4 bone-in chicken thighs (about 2 pounds), skin removed 1 pound yellow potatoes, diced 4 medium carrots, diced 2 cups grape tomatoes, halved cup dry white wine cup Castelvetrano olives, quartered 1 tablespoon capers, rinsed Chopped fresh parsley for garnish (optional) Directions Mash garlic with 1/4 teaspoon salt with a fork to form a paste. Transfer to a small bowl and stir in 1 tablespoon oil, Italian seasoning and crushed red pepper. Sprinkle chicken with 1/4 teaspoon salt. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the chicken and cook until browned on both sides, 6 to 8 minutes total. Transfer the chicken to a plate and top with the garlic mixture. Heat the remaining 2 tablespoons oil in the pan over medium heat. Add potatoes and carrots and the remaining 1/4 teaspoon salt; cook, stirring occasionally, until the vegetables begin to brown and stick to the pan, 6 to 8 minutes. Add tomatoes, wine, olives and capers; cook, stirring and scraping up any browned bits, for 1 minute. Nestle the chicken into the pan, cover and cook until an instant-read thermometer inserted in the thickest part without touching the bone registers 165 degrees F, 10 to 15 minutes. Serve garnished with parsley, if desired. Ingredients 2 large zucchini, trimmed 2 teaspoons extra-virgin olive oil teaspoon ground pepper, divided teaspoon salt, divided 8 tablespoons shredded mozzarella cheese, divided 3 tablespoons grated Parmesan cheese, divided 1 large egg, lightly beaten 1 cups part-skim ricotta 1 (10 ounce) package frozen spinach, thawed and squeezed dry 1 clove garlic, minced cup low-sodium marinara sauce, divided 2 tablespoons chopped fresh basil Directions Step 1 Position racks in upper and lower thirds of oven; preheat to 425 degrees F. Coat 2 rimmed baking sheets with cooking spray. Step 2 Slice zucchini lengthwise to get 24 total strips, about 1/8 inch thick each. Step 3 Toss the zucchini, oil, 1/4 teaspoon pepper and 1/8 teaspoon salt in a large bowl. Arrange the zucchini in single layers on the prepared pans. Step 4 Bake the zucchini, turning once, until tender, about 10 minutes total. Step 5 Meanwhile, combine 2 tablespoons mozzarella and 1 tablespoon Parmesan in a small bowl. Set aside. Mix egg, ricotta, spinach, garlic and the remaining 6 tablespoons mozzarella, 2 tablespoons Parmesan, 1/4 teaspoon pepper and 1/8 teaspoon salt in a medium bowl. Step 6 Spread 1/4 cup marinara in an 8-inch-square baking dish. Place 1 tablespoon of the ricotta mixture near the bottom of a strip of zucchini. Roll it up and place, seam-side down, in the baking dish. Repeat with the remaining zucchini and filling. Top the rolls with the remaining 1/2 cup marinara sauce and sprinkle with the reserved cheese mixture. Step 7 Bake the zucchini rolls until bubbly and lightly browned on top, about 20 minutes. Balsamic Roasted Cabbage Ingredients teaspoon ground pepper 5 tablespoons olive oil, divided ... teaspoon salt, divided 1 large head red or green cabbage, cut into 10 or 12 wedges 2 teaspoons honey 4 tablespoons balsamic vinegar, divided 1 teaspoon fresh thyme leaves (optional) Directions Instructions Checklist Preheat oven to 425 degrees F. Combine pepper, 3 tablespoons oil and 1/2 teaspoon salt in a small bowl. Brush evenly over all sides of cabbage wedges. Combine honey, 2 tablespoons vinegar and the remaining 2 tablespoons oil in a small bowl; set aside. Arrange the cabbage wedges, cut-side down, on a baking sheet. Roast until they start to brown, about 20 minutes. Brush with half the honey-balsamic mixture; turn over and brush with the remaining mixture. Continue roasting until browned and tender, but still holding their shape, about 15 minutes more. Drizzle with the remaining 2 tablespoons vinegar and sprinkle with thyme, if desired. Cauliflower Rice-Stuffed Peppers Ingredients 4 large bell peppers (about 2 pounds) 2 cups small cauliflower florets ... 2 tablespoons extra-virgin olive oil, divided Pinch of salt plus 1/2 teaspoon, divided Pinch of ground pepper plus 1/4 teaspoon, divided cup chopped onion 1 pound lean ground chicken, beef, turkey or textured protein 2 cloves garlic, minced teaspoon dried oregano 1 (8 ounce) can no-salt-added tomato sauce cup shredded part-skim mozzarella Directions Preheat oven to 350 degrees F. Slice off stem ends of bell peppers. Cut the flesh from the stem and chop. You should have about 1 cup. Scoop out seeds from the pepper cavities. Bring about an inch of water to a boil in a large pot fitted with a steamer basket. Steam the peppers until starting to soften, about 3 minutes. Remove the peppers from the pot and set aside. Pulse cauliflower in a food processor until broken down into rice-size pieces. Heat 1 tablespoon oil in a large skillet over medium heat. Add the cauliflower rice and a pinch each of salt and pepper. Cook, stirring, until softened and starting to brown, about 3 minutes. Transfer to a small bowl. Wipe out the pan. Add the remaining 1 tablespoon oil, the chopped bell pepper and onion. Cook, stirring, until starting to soften, about 3 minutes. Add beef, garlic, oregano and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring and breaking up the beef with a wooden spoon just until no longer pink, about 5 minutes. Add tomato sauce and the cauliflower rice; stir to coat. Place the peppers upright in an 8-inch square baking dish. Fill each pepper with a generous 1 cup of the cauliflower rice mixture. Top each pepper with 2 tablespoons cheese. Creamy Turkey and Rice Bake By eatingwell Ingredients 1 cup uncooked brown rice 1 cups water ... cup light cream cheese cup fat-free milk 1 egg cup finely shredded Parmesan cheese (2 ounces) 1 teaspoon dried Italian seasoning, crushed teaspoon kosher salt 2 tablespoons olive oil 1 medium zucchini, trimmed, halved and thinly sliced 2 cups sliced button mushrooms cup chopped onion 4 cloves garlic, minced 8 ounces turkey breast tenderloin, cut into thin-bite size strips 1 slice whole wheat bread, toasted and processed into crumbs, or 1/2 cup whole wheat panko bread crumbs Snipped fresh Italian parsley (optional) Directions Step 1 In a medium saucepan, combine rice with water. Bring to boiling; reduce heat. Simmer, covered, for 35 to 40 minutes or until tender and liquid is absorbed. Remove from the heat. Add cream cheese; stir until combined. Let stand 5 minutes. Add milk, egg, half of the cheese, Italian seasoning, and salt to rice. Stir to combine; set aside. Step 2 Meanwhile, preheat oven to 375 degrees F. In a large skillet, heat 1 tablespoon oil over medium heat. Add zucchini, mushrooms, onion, and garlic. Cook for 6 to 8 minutes or until mushrooms are tender, stirring occasionally. Add zucchini mixture to rice mixture. Step 3 In the same skillet, heat 1 teaspoon oil over medium heat. Add turkey and cook for 4 to 5 minutes or until no longer pink, stirring occasionally. Add to rice mixture; stir until combined. Spread mixture evenly in a 2-quart au gratin or rectangular baking dish. In a small bowl combine bread crumbs, remaining Parmesan cheese, and remaining 2 teaspoons oil. Sprinkle over turkey mixture. Step 4 Bake, uncovered, about 20 minutes or until heated through and top is golden brown. If desired, top with parsley. Greek Stuffed Portobello Mushrooms Ingredients 3 tablespoons extra-virgin olive oil, divided 1 clove garlic, minced... teaspoon ground pepper, divided teaspoon salt 4 portobello mushrooms (about 14 ounces), wiped clean, stems and gills removed 1 cup chopped spinach cup quartered cherry tomatoes cup crumbled feta cheese 2 tablespoons pitted and sliced Kalamata olives 1 tablespoon chopped fresh oregano Directions Preheat oven to 400 degrees F. Combine 2 tablespoons oil, garlic, 1/4 teaspoon pepper and salt in a small bowl. Using a silicone brush, coat mushrooms all over with the oil mixture. Place on a large rimmed baking sheet and bake until the mushrooms are mostly soft, 8 to 10 minutes. Meanwhile, combine spinach, tomatoes, feta, olives, oregano and the remaining 1 tablespoon oil in a medium bowl.
