Most years we see some shift in syrup grade as the season moves along. This year however, we have seen the biggest grade range since we have started producing. We began the year with a very light amber (not quite Golden grade) and yesterday we completed one of our last boils with a very dark syrup. The erratic weather gave us quite a short season this year but gave us a wonderful range of different syrup flavours. We even marked a couple barrels that we might bring to competition this year to compete with the big guns down south!

Always fun adventures and late nights up in Mapleland. Yesterday was another great sap day, David kept the RO’s running full steam until the wee hours of the morning. The maple syrup harvest is ‘all hands on deck all the time’ but you only get 5 weeks a year to make the liquid gold. #makesapwhilethesunshines

Open Tuesday - Sunday from 1pm to 5pm you can check out the Thunder Bay Museum for $3.00!! or bring a kid for $1.50. On your way out grab a bottle of syrup and plenty of other local gifts.

What. A. Week. This week we saw small businesses and Thunder Bay folks all over support each other under such incredible pressure. The @craftrevivaltbay team did an amazing job promoting and facilitating sales for 150 local businesses. They deserve so much respect. We also have to throw a huge shout out to our new friends and @canwestmaple partners over at @hoganshomestead who helped us secure bulk product for our Canada West Line with lightening speed so that we could fill ...an amazing order. Thanks so very much to all of our Nor’Wester and Canada West customers. This week, through school fundraisers, you helped us raise a massive $3,000 donation for @lakeheadschools to provide them with more resources during this pandemic. It could not have been possible without the generous volunteer time from Mr. Charles and Heather from @pulpandpapercreative Lastly, none of this would be possible without the extreme dedication of the CanWest and Nor’Wester Crew. They have been balancing jobs, families, and everything else every day to make sure those lovely maple products make it your way. 2020 was something else, but 2021 will be so much more, and we’re ready for it!
