& Alright here’s last nights recipe! It was a hit with G and he can vouch on how easy and yummy it was to whip. As always - seasonings are never measured other than my salt & garlic is my not so secret ingredient; I put that shizz on everything ... Instructions 1. Boil on low 2 3/4 cups of broth 2. In the meantime cook your protein w seasonings of choice 3. Slice mushrooms, shallots, garlic & oregano leaves 4. Cook your protein & set aside 5. Cook veggies in same pan until tender - without rinsing just add oil to pan 6. Add couscous and stir with veggies until toasted (2-5 min) 7. Add 1/2 cup of broth onto couscous & stir often until broth is absorbed, then add another 1/2 cup of broth. Only add by increments until fully absorbed, creamy & tender (process should take 10-15 min) 8. Add spinach, Parmesan & 1 tbsp of butter. Season lightly with salt & pepper and stir 9.
