Mondays are always better with pancakes . Who’s with me? . No time in the morning? Prepare some on the weekend and either store in the fridge or freezer. Use parchment paper if storing in the freezer so they don’t stick together. . When you’re ready to eat, just pop them in the toaster and load them with your favourite toppings. It uses sunflower seeds or cashews instead of cream to give it a nice rich flavour with an extra dose of nutrients. . Add in chickpeas/tofu/meat or make a sandwich on the side with any of these ingredients to boost up the protein content.... .
