We are curing Char Fillet at the shop today. A simple 1:1 ratio of golden sugar and kosher salt. These fillets will be cured for 12 to 15 hours, then rinsed and rested for 12 to 15 hours, before hitting the @pitbossgrills pellet grill. I (Chef D), love curing fish.
