Fun fact! The initial fermentation of kimchi occurs during the first 2-3 days at room temperature or first1-2 weeks in the refrigerator. During this initial fermentation, active vegetable fibers break down and form lactobacillus, which is a type of bacteria that creates lactic acid as a by-product of their digestion. This creates an acidic environment and lowers the pH of kimchi, preserving the vegetables. The lactobacilli also creates carbon dioxide which creates flavourful compounds and results in bubbling (which is why Omma always recommends opening her jars of kimchi over the sink)
