We love the idea of a hygge lifestyle during our cold winter months and this power broth recipe fits right in. It’s a nice change from coffee and tea in the late afternoon when you’re starting to feel hungry again but don’t want to spoil your appetite. Use organic vegetables and herbs if possible. Power Broth Recipe: 4 stalks celery, roughly chopped 6 asparagus spears, roughly chopped... 1 bunch of parsley 3-4 carrots, roughly chopped 1 medium or large onion, halved 4 garlic cloves, smashed 1 cup spinach leaves 4 purple or red potatoes, chopped into bite sized pieces 4 piece of fresh ginger root, cut into thin slices (no need to peel) 1 lemon zest and juice 2 Tbsp Himalayan sea salt 1/4 tsp cayenne pepper 1/2tsp turmeric In a large soup pot, add all ingredients and add water to cover an inch or so more. Bring to a boil then simmer covered approximately 2-3 hours. Strain and discard ingredients. Check for seasoning. Store in refrigerator for up to 1 week. Can drink hot or cold. Nots: don’t worry about discarding or composting the vegetables, they will be flavourless after cooking that long.
