Last week we had a chat with Owner + Chef John: Before the initial opening of Shinka Sushi, which was formerly New Generation Sushi, I spent years under the tutelage of a traditional Japanese chef from Japan. With a true passion for Japanese cuisine my love for the food and culture grew. At this point I had already spent most of my working years in the restaurant industry and it was with this passion and kn...owledge I opened Shinka in 2004.
