I am currently obsessed with Tempeh, if you haven’t tried it before I promise it tastes way better than it looks. It’s also not as intimidating as it looks. ... They key is to simmer it in water for 10 minutes then marinate or season before you bake or pan fry. It takes on the flavour of whatever you season it with (similar to tofu - but a fun new plant-based texture). You can add more veggies, use quinoa or cauliflower rice instead of rice, use chickpeas, tofu or chicken instead of tempeh. It’s all good, the idea is to make this recipe work for you. Reflection. This weekend while journaling I was reflecting on my journey. Here is what I wish I could tell my 20 year old self (and all humans). 1. Be confident in who you are. If you knew, if we all knew just how divinely we are created we would never ever doubt ourselves. Your only job is to be yourself and do the work to show up as the best version of yourSELF. ... What makes you feel the most confident in who you are? 2. Spend more time getting to know yourself on a deeper level. Sit with yourself. Enjoy alone time. Sit in meditation. Spend quiet time in nature. Turn down the noise of the head and begin to listen to the heart. How can connect with your soul? 3. Love your weirdness or what makes you different. Don’t hide it, dim it down, or hide your shine to make others feel comfortable. Your people will love your light, let it shine bright. What makes you YOU? How can you shine a little brighter today? 4. Do what lights you up. Sure we have to do laundry, but How can you do more things daily that light you all the way up? 5. Do the energy work. You have the tools and power to handle any situation. Don’t play a victim, learn the lessons, know it’s all happening for you. What energy work can you do today to raise your vibration? When hard things happen how do you want to show up? How can you open up and allow things to flow a little more into alignment? How can you make today a beautiful day? Serve up something delicious this Sunday for Mom, try out this Eggplant Lasagna with my favourite Vegan Basil Cashew Cheese and homemade marinara sauce. This is not a quick dish, it is the ultimate way to cook with love and enjoy the process of cooking. Eggplant Lasagna ... For the Marinara sauce 1 (28oz) can diced tomatoes red pepper 1/3 cup olive oil yellow onion, diced 3 cloves garlic, minced cup fresh basil (or 1 teaspoon dried) 1 teaspoon oregano 1 teaspoon parsley teaspoon salt Directions 1. In a small food processor blend diced tomatoes, red pepper, fresh basil, garlic and onion until smooth. In a large pot over medium heat add tomato mixture and remaining ingredients. Simmer on low to medium heat for 30 minutes. For the Basil Cashew Cheese 1 cups cashews (soaked overnight) -1 cup unsweetened almond milk cup basil 2 cloves garlic, minced teaspoon salt teaspoon pepper To Make the Vegan Bail Cashew Cheese 2. In a food processor, blend the cashews, cup almond milk, basil, garlic, salt and pepper until smooth. Blend in more almond milk until desired consistency. For the Eggplant 1 eggplant 3. Wash eggplant and cut off ends. Slice thinly in about inch thick cutting from top to bottom or length-wise. Lay out eggplant on cooling rack and sprinkle with salt and let sit for 15 minutes. This will remove excess water, pat dry with paper towel then flip and repeat on the other 1. Preheat oven to 350 F. 2. Cover the bottom of a 9-by-11 inch glass dish with a thick layer of marinara sauce. 3. Lay eggplant noodles to cover the tray without overlapping. 4. Next spread half of the cashew cheese mixture to cover all noodles. 5. Repeat with another layer of sauce, eggplant noodles and the remaining half of the basil cashew cheese. 6. Finish with one more layer of eggplant noodles and top with rest of marinara sauce. 7.Cover with aluminum foil and bake for 30 minutes. Remove from foil and bake another 10 minutes. 8. Homemade Granola Clusters Works for a great breakfast or healthy snack. Ingredients ... 1 cup almonds 1/4 cup cashews 1/4 cup walnuts 1/2 cup pumpkin seeds 1/4 cup sunflower seeds 1 cup gluten free oats 1/4 cup pitted medjool dates, finely chopped 1/4 cup raisins or dried cranberries (optional) 1/4 cup unsweetened coconut flakes 1 1/2 teaspoons cinnamon 1/2 teaspoon pumpkin pie spice 1/4 cup pure maple syrup 2 tablespoons solid coconut oil, melted 1 tablespoon almond butter (or peanut butter) 1 tablespoon chia seeds Directions 1. Preheat oven to 300 degrees F. Line baking tray with parchment paper and set aside. 2. Place almonds, cashews, walnuts, half the pumpkin seeds and half of the sunflower seeds in a mini blender or food processor and pulse 3 or 4 times until finely chopped. You will have some larger pieces and powdery meal or flour like consistency. Place in a large bowl. 3. Place other half of pumpkin and sunflower seeds in bowl. Add oats, coconut flakes, dried fruit, cinnamon, pumpkin pie spice, maple syrup, almond butter and chia seeds. Stir until well combined. 4. Spread granola into an even mixture onto prepared baking tray, press down with spatula. Should look like one big piece. 5. Bake for 20 minutes, until slightly golden on the top. Let sit for 30 minutes break breaking into pieces. 6. Store into glass jar for up to 2 weeks or freeze up to one month. Can reheat to firm up. Garlic Smashed Potatoes 1 bag of ruby little potatoes (1.5 lb or 680g) 2-3 tablespoons butter (vegan or regular) 1/2 teaspoon garlic salt... 1/2 teaspoon onion powder Sprinkle or salt and pepper Top with a sprinkle of parsley for garnish Directions 1. Boil potatoes in large pot for 30-35 minutes. Strain water and place potatoes on lined baking tray. 2. Preheat oven to 400 degrees F. 3. Smash potatoes. Melt butter in small container, add garlic salt, onion powder, salt and pepper and stir well. Drizzle mixture over all potatoes. Garnish with a sprinkle of parsley (option to add Parmesan cheese we didn’t add this time). 4. Bake 15 minutes, broil for 5 minutes until golden. Looking for a new fun breakfast recipe? Chocolate Protein Pancakes are a new favourite in our house. Yesterday I tripled the recipe so that we could just reheat for an easy breakfast or delicious post-workout snack. Enjoy! Chocolate Protein Pancake Recipe ... Makes 3 pancakes Ingredients 1 banana, mashed with fork 1/2 cup oat flour (I just pulse GF oats in blender) 1/4 cup chocolate protein powder 1 tablespoon cacao powder 2 eggs Directions 1. In a large bowl mash peeled banana with a fork until texture is smooth or more like liquid. 2. Add in oat flour, protein powder, cacao powder, and 2 eggs. Stir to combine ingredients until batter forms. 3. In a medium frying pan over medium low heat add 1/2 tablespoon dairy free butter. When butter melts add 1/3 cup of the mixture into the frying pan (make them smaller to cook more evenly). Cook until bubbles appear and then flip cooking another 2 minutes on the other side until pancake is cooked through. 4. Repeat making two more pancakes (if you doubled or tripled the recipe keep making until all batter is used up). 5. Enjoy warm as is or drizzle with melted peanut butter or maple syrup. I added chocolate chips for Ro. The idea is to customize the recipes to work for you and your family. Banana Free Variation - Sub banana for 1 tablespoon peanut butter, 2-3 tablespoons almond milk and 1 tablespoon maple syrup Not a chocolate fan? - sub chocolate protein powder for vanilla protein powder and omit cacao powder If you make this recipe be sure to tag me in your pics, I love seeing what you are enjoying. As I mentioned in my stories these cookies are not a sugary dessert more of an energy balls made into a cookie and baked. Or a nutrient puck? Doesn't sound cute but it works for a great breakfast, snack or low sugar dessert. My favourite part is they are extremely versatile. If you don't want to do blueberries you could sub for chocolate chips for the kids, or experiment by adding in your favourite nuts, seeds, or favourite superfoods. Enjoy! ... Healthy Blueberry Cookies Makes: 8-10 cookies Ingredients 1 banana, peeled and mashed 1 cup oat flour 1/2 cup oats 1/2 cup blueberries 1 tablespoon coconut sugar (or sucanat or brown sugar) 1 tablespoon hemp hearts (shelled hemp seeds) 2 tablespoons honey 1 egg Directions 1. Preheat oven to 350 degrees F line baking tray with parchment paper and set aside. 2. In a large bowl add banana and mash with a fork until smooth and resembles a liquid texture. 3. Add in oat flour, oats, blueberries, coconut sugar, hemp hearts, honey and one egg into the large mixing bowl with the banana. Stir until well combined. 4. Scoop cookies onto tray, I just made them into a puck or cookie like shape with my hands. 5. Bake for 15-18 minutes until cooked through and a little golden on the top. 10 Ways to be more PRESENT this Holiday Season. This time of year can be so busy finishing up last minute shopping, doing ALL the traditions & wrapping up the end of 2020. One of the biggest gifts you can give yourself & your family is the gift of PRESCENCE. By definition meaning existing & BEing in the hear & now, without being distracted or having your mind going a million miles a minute with 27 browsers open. Freedom is being present. ... 1. Breathe. Start by closing all the browsers & focusing on your breath. That allows you to come into your body in that moment. If you find yourself feeling overwhelmed, stressed, anxious or just feeling chaotic - sit down, lengthen your breaths & welcome the cozy calming feeling that comes when you slow down. (tip - I actually envision closing each browser until they're all gone) 2. Morning Magic. Get up a little earlier. I love to get up before the kids so I can fill my cup up, enjoy my coffee & morning routine uninterrupted. Savor your rituals, this morning I was grateful for a delicious cup of coffee & time to read. 3. Meditate. If you don't already adopt this practice I highly recommend it, it allows you to clear the noise & find clarity all while being able to be so much more present in each moment through out the day. 4. Be mindful. Make mindfulness a practice, this helps you enjoy & savor ALL of the moments. 5. Stretch or move your body. It helps clear your mind & relax your body. Practice listening to your body, what does it want or need? 6. Unplug. This should be #1, put your phone or electronics away. Give yourself time to quickly check in and then put it in another room especially when doing things with your family. BE with your family. Create boundaries & try to get away from the digital world. 7. Nature. Getting outside helps to boost mood, while also grounding you in that moment. How can you get outside this weekend to notice the beauty in each moment & all that surrounds you? We are planning an outdoor hike & hot chocolate. 8. Reduce distractions. 9. Listen. Practice being a great listener. 10. Play. Seriously it's so fun & it's a great way to create memories that last a lifetime with your family.

Lock down? Today we move into another round of lock down and it sparks a lot of uncertainty. It’s ok to feel however it is you are feeling. Try to really sit with yourself and see if your thoughts and feelings are helping you process and move on? Or are you having a pity party and self- sabotaging? If you are Jedi level sabotaging, just notice without judgement or shame and ask what you truly want? Would your 5 year old self be proud of you?... My wish for you is to find a way to: - Surrender - Trust divine timing - Know that things are always working out - Take time for yourself. How are you showing up for yourself? You are the greatest project you will ever work on. It’s ok to take your time and create magic. How can you stay centred and grounded to keep moving forward with ease and grace? Remember even in challenging times your power and light are always present inside you. Decide to shine, and keep rising up. Even when everything seems to be closing remember to stay open. Nature has been a sanity saver for us, I hope you were able to get outside and enjoy the beautiful snowy weather today. If you are struggling my second wish for you is that you reach out and seek help. It’s ok to need support, guidance or whatever it is that you know you need.

Do you FEEL love and respect for your body and self? I started out this year sharing tips on how to increase your body confidence or body positivity. Sharing tips on how to be mindful of the words that you use and the language that you speak. Looking in the mirror and seeing your inner goddess and ways to shine from the inside out. This is all really helpful and it does begin to allow you to see your self and body in a positive light. But this year I've learned and gro...wn so much and I am excited to share how to find self-love on a deeper level. It all begins with feeling. How do you feel when you look at yourself in the mirror? How do you feel about your self? Are your health habits solid? How are you taking care of yourself? Do you feel healthy? What does unconditional self-love look and feel like for you? When you open up your heart to find your truth you might find a few pain points but when you work through it you eventually find joy. You see yourself as so much more than your body. That is the most liberating feeling of all - freedom! If you are tired of hating on your body, tired of trying one fad diet after another to lose weight only to start Monday over and over again, if you are done with the negative self-talk, food rules, or just tired of struggling to establish healthy habits what are you waiting for? Life is so much more than the number on the scale, avoiding foods for fear of gaining weight, over consuming, under consuming, or hating your body. Looking for a Plant-Based Holiday Main Dish? I got you covered! Lentil Loaf is the perfect dish you were looking for, it also works as a great family fav to traditional meatloaf. It is pureed so you can sneak in tons of veggies and the kids (or husband will never notice). Lentil Mushroom Loaf ... 1 tablespoon vegan butter (or favourite oil) 2-4 cloves garlic, minced 1/2 yellow onion, diced 5 large portobello mushrooms, cleaned & chopped 1 large carrot, peeled & shredded 3 tablespoons ground flaxseed 1/3 cup water 1 can green or brown lentils, drained & rinsed 1/2 cup walnuts 3/4 cup oat flour 1/4 cup bread crumbs 1 teaspoon salt 1 teaspoon oregano 1/2 teaspoon poultry seasoning (or can sub for thyme) dash of pepper Glaze 3 tablespoons ketchup 2 tablespoons balsamic glaze Directions 1. In a large frying pan over medium heat add in butter, garlic and onion. Saute for 2-3 minutes, add in diced mushrooms. Cook until mushrooms are browned and cooked through, about 8-10 minutes. Add in shredded carrot and cook another 2 minutes. 2. Preheat Oven to 350 degrees F and line 9 x 5 inch loaf pan with parchment paper set aside. 3. Make flax egg by combining 3 tablespoons ground flaxseed and 1/3 cup water in a small bowl. Stir and let sit for 10 minutes until resembles egg like consistency or thickness. 3. In a large food processor add mushroom mixture and flax egg and processor for 2 minutes, add in lentils, mushrooms, salt, oregano, poultry seasoning and pepper and blend until desired consistency. 4. Add breadcrumbs and oat flour to lentil mixture and stir to combine. Press lentil mixture firmly and evenly into prepared loaf pan. 5. Make the glaze by combining ketchup and balsamic glaze in a small bowl. 6. Cover loaf with glaze and bake 60 minutes until edges are slightly browned. Let cool on cooling rack for 10 minutes before serving. Family Traditions. What are your favourite family traditions around the Holidays? For our family Christmas is ALLLL about the traditions and quality time with family. This year feels a lot different but you have the choice to focus on why it's not great or you can focus on how to make this the best Holiday yet. Our family (since I was a kid) has always made homemade peanut butter balls. A huge shout out to Aunt Verna for kick starting this awesome tradition and my mom fo...r keeping it going. My kids now bake this sweet treat with me each year.... we are actually on our 3rd batch because they LOVE them so much (there is your warning haha). I wanted to share this recipe with you just in case you were looking to make a fun tradition baking with your kids or for yourself. If you know someone who would enjoy this recipe please share and spread the Holiday cheer. Roy Peanut Butter Balls 2 cups peanut butter 1/2 cup butter 2 cups Rice Krispies cereal 2 cups icing sugar 2 cups chocolate chips 1. In a large microwave safe bowl melt peanut butter and butter together, microwave for 1 minute and 30 seconds. Stir until well mixed. 2. Add in icing sugar and Rice Krispies cereal and mix into peanut butter mixture. Stir until well combined. 3. Let mixture cool in fridge until you can easily roll into balls. While mixture is in fridge line baking tray with parchment paper and set aside. 4. Make balls 1 inch in size and place on tray. Place tray in freezer for 3-5 minutes to firm up. This makes it easier to handle when dipping in chocolate. 5. Place chocolate chips in microwave safe bowl and melt for 2 minutes. Stir well with spoon until smooth. Dip each ball in chocolate and place back on tray. Place balls back in freezer for 30 minutes. 6. Store in air-tight container in freezer and pull out just before eating, if they last that long. * you can use crunchy peanut butter for some extra crunch, you can also make your balls look more festive by adding crushed candy canes on top. Because I love a good challenge I am working on a cleaner or healthier version of this recipe, I promise to share that too. Traditions are meant to be enjoyed!

Chocolate Baked Oatmeal Bowl 2 ripe bananas, mashed 1/2 cup chocolate protein powder (@genuinehealth vegan is our fav) 1/3 cup chia seeds 2 cups gluten free oats 3 cups unsweetened original almond milk (or your fav dairy-free milk) 1 tablespoon cacao powder 1. Place banana in large bowl and mash with a fork until smooth. Add in remaining ingredients and stir together to avoid clumps. 2. You can bake right away or store in fridge until ready to eat. Bake at 350 F in a 9 x 9 inch glass baking dish for 20 minutes. 3. Serve warm or cold, we love warm this time of year. Top with your favourite fixings - shown bananas, unsweetened coconut, and melted peanut butter. The kids love a few chocolate chips or nuts and seeds too. Looks like the kiddos will be home longer which means more cooking and baking together. We thought we would share Sura’s favourite new cookies recipe that she’s still working on a name for the cookbook. Sura Favourite Oatmeal Peanut Butter Cookies ... Ingredients 1 cup gluten free oats 1/2 cup oat flour 1/4 cup ground flaxseed 1 cup peanut butter 1 egg 3 tablespoons coconut sugar (can use less but this was the secret amount that made the kids like the cookies) 2 tablespoons pure maple syrup 1/2 teaspoon baking soda Directions 1. Preheat oven to 350 degrees F, line baking tray with parchment paper. 2. In a large bowl add all ingredients then mix together. Roll into 10-12 balls and lightly press down with a fork to make them pretty. 3. Bake for 15 minutes, let cool on cooling rack for 5 minutes before serving. This recipe is simple enough that the kids can do it. If you’ve had a long week of online learning why not de-stress by having fun together in the kitchen. I told you I was going to keep sharing goodies all month long with you! Here is one of my favourite new no bake chocolate cookie recipes. Enjoy! Healthy Chocolate Macaroons 1/4 cup vegan butter... 4 tablespoons cacao powder 4 tablespoons chocolate protein powder 1/4 cup unsweetened original almond milk 1/2 cup unsweetened coconut flakes 1 cup oats 2 tablespoons honey (or pure maple syrup) 1-2 crushed candy canes (optional) Directions 1. In a medium sized pot over medium heat melt butter and mix in cacao powder, cook for around 2 minutes stirring frequently to avoid sticking and to mix well. 2. Remove from heat and add in protein powder, almond milk, coconut flakes, oats, and honey. Stir until well combined. 3. Line baking tray with parchment paper and scoop cookies onto tray. Place in freezer to chill for 30 minutes. Store in container in fridge or freezer. 4. Option to top with crushed candy canes. This recipe is not overly sweet because that is the way I like it. If you feel like it needs a little bit more feel free to play around with it and add a bit of coconut sugar. Happy Meatless Monday! Did you know that changing one (or more) meal to a plant-based or meatless meal could save you money each week? I know the holidays can be a stressful time for a lot of people especially this year. Try adding in a few more meatless meals and watch how much you can save and how great you can feel. I plan to keep you inspired in the kitchen so you always have lots of fun, EASY recipes to make. I don't have time for bells and whistles but I do want... my food to taste fantastic. Mushroom Soup (dairy-free, gluten-free, plant-based) Ingredients 2 tablespoons vegan butter 1/2 yellow onion, diced 2 cloves garlic, minced 5 portobello mushrooms, diced 1 (8oz.) package cremini mushrooms, diced 3 cups vegetable broth 1/2 cup cashews, soaked overnight 1 1/2 cups original unsweetened almond milk (or favourite dairy free milk) dash of pepper Directions 1. In a small food processor or blender add cashews (drained and rinsed) with almond milk and blend until smooth. Set aside. 2. In a large pot over medium high heat add vegan butter, onion, garlic and mushrooms and saute for 8 minutes stirring frequently to avoid sticking, until mushrooms are cooked and browned. 3. Once the mushrooms are cooked stir in broth and almond milk mixture. Once heated top with pepper and serve warm. This soup is hearty, comforting and still nutritious so dig in. Apparently it’s national cookie day or something....Serving up healthier cookies for the Holidays. They still taste fantastic so maybe just don't tell them....they will never know and you can feel good knowing what is in these delicious cookies. Enjoy! Chocolate Peppermint Cookies 1 cup peanut butter... 1 large egg 1/4 cup protein powder (prefer chocolate) 2 tablespoons cacao powder 1/3 cup honey 1 teaspoon baking soda 1/2 cup chocolate chips 2 crushed candy canes Directions 1. Preheat oven to 350 degrees F and line baking tray with parchment paper. 2. In a large bowl add in peanut butter, egg, honey and mix well. 3. Add in protein powder, cacao powder, baking soda and chocolate chips. 4. Stir until mixed well. Using a cookie scoop spoon balls onto prepared tray. 5. Crush 2 candy canes by placing them in a bag and rolling over them or crushing them with a rolling pin. Top each cook with crushed candy cane pieces. 6. Bake for 12 minutes, let cool for 5 minutes before serving. Store in air-tight container for up to 5 days. Option to add 1 teaspoon peppermint flavour for more of a peppermint chocolate flavour.
