This is a really simple and quick to assemble chicken curry. It uses the instant pot to quickly cook the curry and uses simple basic spices to add a punch of flavour. It is a very regular go-to recipe for me on weekdays, no marination needed and only a few minutes prep gives you this light yet really flavourful curry. Use bone-in or boneless chicken as you prefer, add or do not add potatoes. Basically you can change it up a little bit everytime you make it.
