Cook, Eat, and Be Happy Pasta Delight’s Sun-dried Tomato Pesto Butternut Squash Soup 6 tablespoon olive oil ... 3/8 of a container of Pasta Delight’s Sun-dried Tomato Pesto 1 butternut squash, halved lengthwise and seeded 1 onion, diced 3/4 cup chopped carrot, or to taste 2 small pinches cayenne pepper, or to taste 4 cups chicken stock 1/4 cup heavy whipping cream, or more to taste salt and ground black pepper to taste 1.)Preheat the oven to 204C/400F. 2.)In a small bowl thin down some sun-dried tomato pesto with some olive oil 3.)In a large bowl, toss the squash, onions, carrot with the sun-dried tomato pesto olive oil slurry, salt and pepper. Line a baking tray with parchment paper and empty the bowl out, making sure the veggies are in an even layer. Roast for 30 minutes, stirring halfway through, or UNTIL VEGGIES ARE TENDER AND GOLDEN . 4.)Transfer the roasted squash and onions to a large pot; add the chicken stock , half of the cream and cayenne pepper . Simmer for 25-30 minutes. 5.) Purée until you have a silkily smooth soup. Adjust seasonings to taste. 6.) Garnish stir in a table spoon of cream so the soup look marbled and sprinkle with chopped parsley or chopped roasted pecans If you have any recipes you have put pesto in please share them !!!!
Great weekend to BBQ! How about some Pesto Brisket with tasty beef from Four Whistle Farm 3 lb Brisket 1 cup pesto 1 teaspoon BBQ rub... BBQ Rub (makes 9 tablespoons): 1 tablespoon cumin 1 tablespoon paprika 1 tablespoon garlic powder 1 tablespoon onion powder 1 tablespoon chili powder 1 tablespoon brown sugar 2 tablespoons kosher salt 1 teaspoon cayenne pepper 1 teaspoon black pepper 1 teaspoon white pepper The Roast: Place a sheet of plastic wrap over the brisket and tenderize it with a mallet. If you do not wish to roll the brisket, you can cut a slit in the middle to create a pocket for the pesto. Once flattened, sprinkle the brisket with the BBQ Rub, then cover in pesto. Roll it and hold together with tooth picks or cooking twine. BBQ until an internal temperature of 130 degrees is reached for Medium doness. Serves 6-8

Simple and Easy Baked Brie with Pesto and Sun-Dried Tomatoes Prep time: 15 minutes Bake time: 12-15 minutes... 1/2 cup pesto 1/4 cup sun-dried tomatoes, (preferably packed in oil and julienne cut) 1/4 cup pine nuts 1 round (8 ounces) Brie cheese (about 4 inches in diameter) Canapé French Bread , toasted Preheat oven to 350F. Coarsely chop apple with Food Chopper. Combine apple, almonds, cranberries, brown sugar and cinnamon in Small Batter Bowl; mix gently. Stir in butter just until ingredients are moistened. Cut Brie in half horizontally using Utility Knife. Place one half of Brie, rind side down, on Small Bar Pan. Spoon half of the pesto onto bottom half of Brie, spreading evenly. Top with half of the sun-dried tomatoes, followed by half the pine nuts. Now top with the remaining half of Brie, rind side down. Spoon remaining pesto, sun-dried tomatoes and pine nuts over top. Bake 12-15 minutes or until cheese is soft and just begins to melt. Serve with toasted Canapé French Bread, apple wedges or assorted crackers. Yum!
Try this tasty simple recipe with our cranberry pesto pasta: INGREDIENTS -fresh pasta -cranberry pesto... -1 onion chopped -1 pepper chopped -cherry or grape tomatoes halved -1 tablespoon of oil Ingredients Available at Old Strathcona Farmers' Market: Pasta, pesto, onions, peppers, tomatoes and oil. DIRECTIONS Cook fresh pasta in boiling water until desired al dente. Sauté onions, peppers and tomatoes until tender and add pesto to sautéing vegetables to release flavour. Once pesto and vegetables are ready, add cooked pasta and toss well. Serve as a side dish or an entree one by adding chicken, Italian sausage or beans.
