TRAVEL UPDATE: Covid-19 Coverage and assistance is being offered by Air Canada Vacations for all new vacation packages to select destinations in Mexico and the Caribbean. It will cover emergency medical and quarantine costs related to Covid-19 whilst travelling between September 4, 2020 and April 30, 2021. Our government has decided to continue the closure of our borders to US residents until at least September 21. Definately a good choice with their numbers still continuing to climb. However I do hope they decide to drop the quarantine period when entering Canada soon so that the travel world can begin its long road to recovery. On a positive note, if you do decide you are ready to travel (and quarantine on your return) there is one insurance company that will provide coverage for Covid. Message me for details. #timetotravel

It's a HOT day in Niagara, so let's enjoy a cocktail Here a great recipe for a Barbados Rum Punch : Freshly squeezed Lime juice Sugar Syrup (two measures)... Dark Caribbean Rum (three measures) Water (four measures) Angostura Bitters (dash) Freshly grated nutmeg Passionfruit (optional) Place sugar and water in a saucepan and cook until the sugar has dissolved and added to the juice. Add rum and water, pour into a glass with lots of ice, and use a dash of bitters and sprinkling of nutmeg. When it comes to dark rum, the more aged, the better for the rum punch. Add a slice of passionfruit. BARBADOS - An island country thatwhile it may not have invented rum (a heavily-contested accolade in the Caribbean)has certainly perfected it. For this reason, we are granting Barbados with the distinct honor of being the island in the Caribbean to go to for the best rum punch.

Until we return to Jamaica for the real thing, we can try our own versions of their classic food. Jamaican allspice, Scotch bonnet peppers, cloves, cinnamon, nutmegthese are just a few of the ingredients found in the jerk seasoning that defines one of Jamaica’s most iconic dishes: jerk chicken. Sweet and spicy, perfectly grilled, the flavourful meat is traditionally served with rice and beans and a tasty fried flat bread. Ingredients... JERK BASE 1 tbsp ground thyme or 2 tbsp thyme leaves 1 or 2 Habanero peppers (or Scotch Bonnet) BOTH ARE EXTREMELY HOT! 1/2 teaspoon nutmeg 1/2 cup packed brown sugar 2 tbsp soy sauce 1-2 bunches green onions (6 to 12) salt and pepper to taste (at least 1 tsp Kosher or sea salt) 1 teaspoon cinnamon 1/2teaspoon ginger minced 2 tsp Jamaican allspice 6-8 garlic cloves JERK SAUCE 2 tbsp Jerk paste (above) 2/3 cup (5 oz) pineapple juice 3/4 cu Red Stripe beer one chicken, cut up into pieces Instructions Directions for Jerk Base Place all ingredients for base in a blender or food processor and process until smooth. Use to marinate chicken before cooking on the barbecue. Grill on the barbecue until fully cooked. Directions for Jerk Sauce Add all ingredients listed for the Jerk sauce to a pan over low heat and allow to simmer for 30 minutes to an hour, stirring often. Add more juice or beer to thin the sauce, alternatively, simmer longer for a thicker sauce. Use to serve, spooned over cooked jerk chicken.
