Happy Valentines Day!

This weekend I made a chocolate Entremet for a 15 years old! I made as well few mini ones for my family to enjoy! An Entremet is a cake made with different layers of textures that works well together. Usually it is made of a sponge cake (I usually use almond dacquoise or a genoise), a mousse layer, a crunchy layer and a wobbly layers like jelly or custard.... The possibilities are endless and it is so fun to play with all those textures!
