This gorgeous lactose-free cheese is called Le Mamirolle. The unique process used to make Mamirolle was developed in France back in the 1930's. Sine 1996 it has been produced in Quebec under the license of Fromagerie Éco-Délices. Supple and smooth with a slightly nutty and fruity taste this cheese is very versatile. This magnificent cheese is Tomme au Marc de Raisin from the Rhône-Alpes region of France. It is pressed, uncooked and is matured for 3-6 months, and made in a similair way to Tomme de Savoie. The cheese is then aged under a thick blanket of grape marc, the residue that's left after pressing the fruit to make wine. The taste of the marc soaks through to the heart of the cheese and creates a gorgeous, mellow fruity flavour with some sharpness. New cheese alert! Normanville is a soft, but full flavoured camembert style cheese. The milk from Normandy pastures is the key to the exquisite farmhouse flavour of this cheese. It is made using traditional methods and is ripened for a minimum of 7 weeks. It is creamy and tasty, with an amazing melt on the tongue texture. If you have been served by Desiree in our shop, you have likely walked away with a wedge of Piave Stravecchio. It is definitely one of her 'desert island cheeses". Similair to Parmigiano Reggiano in texture, but definitely its own cheese, we love to enjoy ours alongside a glass of Prosecco. Piave is sold at different ages and we carry a few different kinds, but this 12mo+ version is our favourite. With this version you get a hint of pineapple right at the end of its lovely, long finish.
