Parker' Hatch (Mildly) Hot Pepper The Hatch peppers are a group of mildly spicy heritage cultivars originally grown by the native peoples of New Mexico and developed into modern cultivars from the late 1800s onwards. They are an integral ingredient of the cuisine of the Southwestern US. ‘NuMex Joe E. Parker’ produces long, slender, thick-walled peppers about 6-8 inches long in abundance. They are usually picked... when green but can be left to age to red. When green, they have a pungent, rich, sometimes smoky flavour. When red, these flavours remain but are joined by a bit more spice and earthiness. Further aging mellows the spiciness. Scoville units of spiciness can range from 1500-3000.
