We have been out in the orchard pruning the apple trees! To do this, we chop the two largest branches on the tree. This gives the tree energy to put out nice new branches where we will get fruit in the future. Each variety of apple tree is unique in the way its branches grow & requires a different technique. We are working on our varieties that are dormant & not prone to winter injury, like our hardy Galas & Cortlands! For others, we will wait until march when they are dormant, but the cold has passed

What makes our pizza pies so special? The from-scratch dough! The sourdough crust is a recipe Chef Ben has been playing around with for a few years. It originated as part of his ‘chef in the bush’ cooking, using his 2-year-old sourdough starter & an open fire. While we don’t have a traditional wood fire oven in the Pingle’s market, we’ve been able to tweak this recipe to give it that traditional feel, & use the sourdough starter to create the unique flavour.
