Just over three years ago we settled into our new home in Ucluelet and officially began the journey of Pluvio. We started with a beautiful restaurant, a garage and a mud field. Over the course of six months we transformed the garage and mud field into four gorgeous hotel rooms and a glorious garden. It's been a crazy three years full of wonderful guests, road closures, amazing team members, great relationships, bears, terrific produce and, what was it ... Oh ya, COVID! ... It's been a wild ride and we have appreciated every moment of it, the good and the bad, as it has guided and shaped us into who we are today. We are still closed while the team take a well deserved break, but are looking forward to the future and can't wait to see how we have evolved in another three years. From last summer, our fig leaf daiquiri: fig leaf infused @flordecanarum 4 year rum, grapefruit, lime and fig leaf syrup. Simple, delicate yet unexpected, the fig leaf infusion adds a unique flavour that falls somewhere between a fig and a coconut.... Elderflower is one the first indicators that Spring has officially arrived! When harvested at just the right time, the flower gives off an intense aroma that translates to incredible infusions. Classically it appears with rhubarb to make delicious Spring desserts. As we are still waiting for the province to say that it is safe to resume travel and dine in restaurants, the elderflower that we have harvested has been tucked away for later. Whilst we are not strictly reservation only, we do not specifically leave tables available for walk-in’s + with our current limited capacity, we have been booking up pretty far in advance. This dynamic duo joined our team upon reopening this year after making the move from the Okanagan to the Island with their fur baby Mooshu. Originally from a small French village in the Pyrenees, Pierre is at home in a small community + has enjoyed spending time outside getting to know Ucluelet. Pierre joined our kitchen team + has spent the summer refining his skills working with our wonderful Island vegetables + foraged bounty whilst delighting our guests at the kitchen cou...nter. Joining us at what turned out to be the start of an unexpectedly busy summer for us, Emily was thrown in at the deep end + she instantly began swimming with grace, good humour + genuine care for our guests + her team. When not in the restaurant, these two are out exploring the coastline + forest, making friends with other dog parents in town + catching up on some much needed rest! After connecting with her online to create some little bowls for our table decorations before Pluvio even existed, we finally got to meet in person in January + begin work on this collaboration. Well done @ryanbroeky for keeping the Pluvio tradition alive and coming in FOURTH at the @madewithlove_ cocktail competition in Victoria this week. Ryan was given @flordecanarum 12 year aged rum and the story of Narnia for the basis for his cocktail. Ryan’s cocktail contained lacto fermented sea buckthorn, fig leaf, burnt cinnamon and a touch of salinity, and the presentation and story that went along with it were amazing!... The finished cocktail was incredible; complex, sweet, sour and a little salty, just like Ryan!
