If you have leftover cranberries from Thanksgiving, try these muffins for a school snack this week. They're egg-free, nut-free and can easily be made gluten-free and dairy-free if that's what you need! 3/4 c flour (a GF blend works) 1/4 c cricket powder 1/4 c ground flaxseed... 1/2 c warm water or milk 3 tbsp oil 3 tbsp orange juice 1/2 c sugar 1/4 tsp baking soda 1 tsp baking powder Pinch of salt 1 c cranberries Mix the ground flaxseed and water/milk together and set aside to thicken for 10 minutes. Mix flour, cricket powder, sugar, baking soda and powder and salt together. Add orange juice and oil to flaxseed mixture. Then mix the wet and dry together, fold in the cranberries and scoop into mufifn tins. Bake at 375F for 15 minutes.

We were so pumped to finally try this bread made special by our friends @loafandhoney with our cricket powder! It went perfectly with our chili tonight and was delicious. You would never be able to tell there were ground up crickets in it! But our crazy kids who don't like chili and mostly just ate the bread at least still got in their protein and vitamin B12. The chili was also extra delicious with bison from @cpbisoninc. Support local!

Keto-friendly Strawberry Muffins 3 eggs 1/3 cup almond milk... 1/3 cup coconut oil 2 cups almond flour 1/2 cup cricket powder 2 tsp baking powder 1/4 cup monk fruit/erythitol sweetener (use 1/2 cup if you want a sweeter muffin) 1 cup strawberries (or blueberries) Few drops of vanilla Stevia (optional) Room temp eggs and melted coconut oil will mix best together. Mix dry ingredients together and add to wet ingredients. Bake at 350F for 23 minutes.
Back 2 School Recipe #2 Crunchy Chocolate Energy Bites 1/2 c raw pumpkin seeds 1/4 c raw sunflower seeds... 1/4 c cricket powder 6 medjool dates 2 tbsp cacao powder 1 tbsp water 1 tsp vanilla extract Mix all in a food processor or blender until the dough can be rolled into balls and then refrigerate. The cricket powder blends well and you can't taste it, but it acts as a great binder AND gives an awesome amount of nutrients. The seeds provide the perfect crunch, as well as some additional protein and healthy fats. Naturally sweetened by the dates and sweet flavour from the vanilla and cacao. These are so tasty!
