That was a week of lots of sweet maple syrup but feels like winters back now for the weekend see how soon we can get back at her.

Whoppppiiieee we're back in action syrup season 2021 is on a roll

Maple syrup season is getting closer!! Also so is valentines day and weddings! We just did a bunch of little jars for a wedding and would be happy to help you out with some for your weddings or even just for friends ! Who doesn't like to receive maple syrup as a sweet little gift . Message me for more info. We'd be happy to help you.

For those of you that haven't seen the process of the making of syrup once it's in from the bush we send it thro the R.O as we call it. Reverse osmosis is the long name for it. This machine first pic, separates the water from the sap so we only have a portion of the boiling time as we don't need to steam all the water out anymore. From there it comes in to the stove where it runs thro the top section where it gets warmed up the second layer it boils and gets close to done the...n it come out to the front pans that are the finishing pans where it finishes up. With a probe in there we can set a digital temp as to when the syrup can come off. Once it's cold it can only be between 2 degrees space difference for passing so it has to be watched really closely on the stove to get it just right. From there it runs thro the filter press in pic 4 to make sure there's no dirt in it anywhere and off into the holding bin in pic 5 from there we put it in barrels to ship and Fill jugs for all of our friends and neighbours to stop by and enjoy the deliciousness of it.!!!! A little glimpse at how we get that sap to syrup to bring it to your table! Definitely well worth the hours spent to get it there nothing as natural and pure for a sweetner as maple syrup. The new boss we added to the team for this season was with us this morn at the crack of dawn (never mind the fact he's allowed to show up on the job in pj's wudnt we all like to. )to get it all fired up for cooking another 4 barrels. He needed a snooze inbetween but woke up and told us to get at er and pick up the slacks. So we listened and got some jugs filled so if your out of syrup or ready for some fresh taste come on over and we'll send you off with a whole lot of goodness.

Mother Nature has brought in warmer weather in our favour Season of 2020 maple syrup has really begun here in Purple Valley !!!!! We are so excited for this again , hopefully all our friends are to. Hope to see you all soon dropping in for a visit and a fresh jug of sweet syrup !!!
