Today we are excited to unbox the Ikawa Pro sample roaster. Our newest tool will help us get to know our coffee even before it reaches our production roaster. This will help us detect any defects and explore different roasting profiles to ensure that we bring out the best in the coffees we bring in.

Who wants some Chiapas? We have some fabulous coffee from Mexico, considered the favorite amongst our latest shipment of coffee. At medium-dark roast, expect a good balance of acidity and sweetness, with notes of guava, caramel and dark chocolate. PM me for orders by this weekend.

We really like this one. Roasted light to medium. Matte finish on the bean surface. Very clean cup, well balanced sweetness. Nice way to top off an easter feast.

My Coffee Journey... so far It has been a few months since I started roasting and tasting specialty coffee from all over the world. So far, I have enjoyed coffee from: Harrar region, Ethiopia Yirgacheffe, Ethiopia,... Kenya Burundi, Poco Ranakah, Flores, Indonesia Yemen Panama Mexico Guatemala Nicaragua Kona, Hawai’i Ka’u, Big Island, Hawa’i and Benguet, Philippines One of my goals is to be able to develop my pallete in distinguishing and appreciating the subtleties of all these different coffee from all over the world. Is there really a difference between commercially bought coffee and specialty coffee? You bet! Specialty coffee’s origin is traceable. So the consumer knows exactly where it was grown, what variety it is, how it was processed (natural or washed), when was it shipped to America, when, how and who roasted it. But honestly, in the morning when you just hop out of bed, you really dont’t care. You just want a good cup of coffee to kickstart your day. And specialty coffee respects that need of ours to be awaken in a SPECIAL way. And because specialty coffee is grown with so much respect from the seed, to the plant, to the fruit, you can definitely appreciate it in your cup.

Ethiopia is believed to be where coffee was first discovered. Today, Ethiopia continues to be one of the top producers of the most amazing coffee in the world. It has always been my top picks for fruity, juicy and sweet cup of coffee. The darker roasts produce velvety smooth brew with notes of cocoa and caramel. Ethiopia has one of the most diverse arabica coffee plant varietals in the world; a product of many years of research and development.

Photos taken from a coffee farm in Kona, Big Island Hawai’i. There are a lot of coffee farms offering free farm tours in Kona and neighbouring town of Ka'u. For a true coffee fan, Hawaii's Big Island is a pilgrimage worth doing.
