Digging up wild burdock root ain't easy! Those big, tough roots go down DEEP and are difficult to remove without breaking. But well worth it for the amazing plant medicine, available all around us. Look what i found in the forest today... A gorgeous Lion's Mane mushroom! My favorite mushroom to cook with. Such a nice and mild, fresh seafoody flavor reminiscent of fresh scallops. It's also an amazing superfood with tons of health benefits, including boosting brain function and balancing the immune system. Think I will make a pasta sauce with this beauty.
