I was blown away today when I read this... "Did you know that according to National Geographic, some vanilla imitation flavorings are derived from... beaver castor sacs [a part of the beaver's BUTT]?! If you don't believe me, look up castoreum. EEEK!... We say stick to the safe side and make your own vanilla extract with just two simple ingredients. All you need is a little patience and you'll be on your way to delicious baked goods You need: 5-6 vanilla pods (sliced open) 1 cup vodka 8 oz. glass bottle with lid Add vanilla pods and vodka to a glass bottle with secure lid, give a lil shake and store in a dark place at room temperature for 8 weeks (or longer, the longer the better!). Enjoy this homemade and healthier vanilla extract in your favorite baked goodies! Don't have time to make your own? No worries! Just make sure you are buying real vanilla extract, organic if possible and with no added artificial or "natural" flavors." There you go... Hopefully not too gross for you. In our discussion today, I am going to cover 3 essential nutrients - iron, zinc, and copper. Iron is the most common nutrient deficiency, especially for perimenopausal women, which is also linked to depression. Meat sources of iron (called Heme iron) include all meats and fish while plant based sources (Non Heme Iron) include tofu, legumes, nuts and seeds. Low levels of zinc have also been linked to increased depressive symptoms. Sources of Zinc are seafood, meat, seeds,... beans, peas, and lentils. Zinc helps the brain and body manage stress. Copper is also essential for brain function, particulary production of a specific molecule of energy, making sure our brain cells are energized. When our brain is well nourished, and energy levels are appropriate, your mental well being will be protected. Sources of copper can be found in cashews, sunflower seeds, leafy greens (like Swiss chard and kale), lentils, and dark chocolate. Yes...Chocolate..!!!!

Omega 3 Fatty Acids have a very strong connection to brain health. In fact, your brain has about 60% fat. Essential fatty acids help improve mood, memory disorders, and are linked to a reduction in depression and dementia. Countries like Japan, that have a high intake of fish ( which is rich in Omega 3), have a lower incidence of major depressive disorders. When these people do take supplements containing omega-3 , there is a greater reduction in symptoms (according to Transl...ational Psychiatry in 2016). Our intake not only from oily cold-water fish, omega 3 can be found in nuts, seeds, and in smaller amounts of leafy green vegetables. Hemp seeds have also been found to have GLA ( Gamma linoleic acid) which is a Omega-6 Fatty acid, as well as magnesium. GLA is a special Omega 6 anti-inflammatory. Therefore conditions such as anxiety and depression are considered inflammatory states, and omega -3s and GLA work to oppose inflammation.

Vitamin D is often referred to as the SUNSHINE VITAMIN because our body produces it as a response to the sunlight. It is important to get an adequate amount of Vitamin D through our foods or supplements. A low level of Vitamin D is present in people with Mental health conditions such as depression, schizophrenia and cognitive decline. We need about 1000 iu to maintain optimal levels. Suicide increases in early spring when Vitamin D levels are at their lowest, unless you liv...e near the equator. Higher rates of Seasonal Affective Disorder is seen in northern latitude countries. We are unable however to manufacture enough Vitamin D from the year round and their is a limited supply of food ( such as eggs, some dairy products, salmon, cod, sardines, and mackerel), it is recommended to take a supplement of at least 1000 iu. Some of the amazing benefits are regulating the absorption of calcium and phosphorus, and facilitating normal immune system function. Getting a sufficient amount of vitamin D is important for normal growth and development of bones and teeth, as well as improved resistance against certain diseases. Other benefits of Vitamin D are : 1 - Vitamin D fights disease- a. reduces your risk of multiple sclerosis b. reduces your risk of developing heart disease, c. helps to reduce your risk of developing the flu 2.- Vitamin D helps to reduce depression a. helps to regulate mood and wards off depression 3. Vitamin D helps to lose weight When you take together Vitamin C and D, a appetite suppressing effect occurs - meaning you will be able to handle your cravings better. Beware of D-ficiency Many factors can affect your ability to get sufficient amounts of vitamin D through the sun alone. These factors include: Being in an area with high pollution Using sunscreen Spending more time indoors Living in big cities where buildings block sunlight Having darker skin. (The higher the levels of melanin, the less vitamin D the skin can absorb.) These factors contribute to vitamin D deficiency in an increasing number of people. That’s why it’s important to get some of your vitamin D from sources besides sunlight. The symptoms of a vitamin D deficiency in adults include: tiredness, aches and pains, and a general sense of not feeling well severe bone or muscle pain or weakness that may cause difficulty climbing stairs or getting up from the floor or a low chair, or cause you to walk with a waddling gait stress fractures, especially in your legs, pelvis, and hips Doctors can diagnose a vitamin D deficiency by performing a simple blood test. If you have a deficiency, your doctor may order X-rays to check the strength of your bones.

Magnesium found in legumes, nuts, seeds, and dairy products. Other sources include spinach, quinoa, black beans, and chickpeas. It helps to relax the muscles including blood vessels, help lower blood pressure, and improve blood flow to the brain, plus stimulates GABA (a neurotransmitter) that eases anxiety and nervousness. Although a magnesium supplement may help, it is always better to consider whole foods instead. When eaten as a whole food, more of the nutrient is absorbed.
