Le Kombu Gaspésien is a major player in our ramen. It actually accounts for almost half of the broth. Since we don’t use animal products in our broth, we have to get creative in order to get that mouth feel of collegian that bones would provide. Local kombu does double duty for us in our vegan dashi by giving us a rich ocean flavour and a full-bodied texture. No bones needed.
