Here’s all the nerdy specs:... - 100% Pinot Noir from Brambleside and Starling Lane vineyards on the Saanich Peninsula - Traditional Method - blend of 2017 & 2018 base wines (non-vintage) - 4-5 hrs skin contact before pressing to achieve colour - base wines fermented with wild yeast in neutral oak barrels and aged on lees 6-8 months - secondary fermentation in bottle kickstarted using primary ferment lees + organic sugar (no commercial yeast added!) - aged in bottle on lees for 18 months - unfined/unfiltered, only riddling only for clarification - no dosage (brut nature <3 g/L residual sugar) - disgorged December 2020 - only 50 cases available!

After testing the waters with our first Xmas open house weekend (and watching the BC COVID health orders closely), we are pleased to officially offer wine tasting flights for the next two weekends! Wine flights will include your choice of any 3 from our list of 5 new releases... including the Scrumpy cider.) If you are interested in joining us for a tasting Fri to Sun, Dec 11-13 or Dec 18-20, we strongly recommend folks make reservat...ions. Please 250-652-3782 or [email protected] to book your preferred 1/2 hr time slot (walk-ins will be accommodated if space allows.) The wine shop will remain open for wines sales and online order pick-up during posted business hours (11am-5pm.) No reservations needed if just wine shopping. Masks are required at all times while in the tasting room / wine shop, except during your wine flight tasting. And for those unable to visit us in person, our online shop is bumpin’ and we’re offering free shipping on minimum orders ($250 Canda-wide, $125 BC-wide and $75 for local Victoria deliveries.) Oh P+G... how we’ve missed you! That crunchy fruit those spice notes that perfect food-pairing acid. P+G is our take on Burgundy’s Passe-Tout-Grains, a red blend made from #pinotnoir and #gamay grown in the Cowichan Valley, fermented with wild yeast and aged for two years in neutral oak barrels. The combo of these classic Burgundian varietals grown in our cool, coastal climate creates something pretty special... we just wish we could have made more! Only 50 cases produced. Now available in both our shops: online and at the winery. Speaking of... we're reopening the wine shop over the next three weekends for wine sales and lots of Christmas cheer.
