A delicious 3-ingredient chia seed pudding recipe from @eatingbirdfood Ingredients: 34 Tablespoons chia seeds 1 cup milk (I like unsweetened coconut, almond or cashew milk) 1/2 Tablespoon maple syrup, honey or sweetener of choice*... 1/4 teaspoon vanilla (optional) Toppings of choice: fresh berries or other fruit, granola, nut butter, etc. Instructions: In a bowl or mason jar, stir together chia seeds, milk, maple syrup and vanilla. Once the chia pudding mixture is well combined, let it sit for 1-2 hours or overnight. If it’s not thick enough, just add more chia seeds (about 1 Tablespoon), stir and refrigerate for another 30 minutes or so. Need a new breakfast recipe? Check out this awesome peanut butter overnight oats recipe from @minimalistbaker Ingredients: 1/2 cup unsweetened plain almond milk (or sub other dairy-free milks, such as coconut, soy, or hemp!) 3/4 Tbsp chia seeds ... 2 Tbsp natural salted peanut butter or almond butter (creamy or crunchy // or sub other nut or seed butter) 1 Tbsp maple syrup (or sub coconut sugar, organic brown sugar, or stevia to taste) 1/2 cup gluten-free rolled oats (rolled oats are best, vs. steel cut or quick cooking) top with fruit of choice Directions: Add ingredients into a mason jar, tupperware or other container of choice.
