Our team of incredible humans have worked tirelessly to keep our community fed and for their dedication and commitment we are truly grateful. It’s experiment time in the kitchen. Too many green tomatoes so I’m trying a batch of fermented tomato pickles. Green tomatoes (and a few cukes), aromatics including some garden tarragon, local garlic, dried hot peppers, bay leaf, onion, peppercorns and sea salt brine. I have to leave it on the counter for 7 days and keep the tomatoes submerged (with a weight) and the top loosely covered (I used a clean cloth) and top up with brine when necessary. This Stanners Vineyard wine will make the perfect pairing for your Thanksgiving dinner. Stanners winery is located in Prince Edward County. They are a small, family owned vineyard and boutique winery dedicated to producing premium Pinot Noir. Their 2018 Pinot Noir grapes were from their estate vineyard and from another nearby vineyard in the county. The 2018 growing season was relatively warm, producing ripe, darker fruit flavours and more tannins than in the cooler years.... Their traditional approach with minimal handling in the winery resulted in an elegant Pinot Noir that reflects the County’s terrior strawberry and dark cherry flavours, good minerality, fine balanced acidity and soft tannins. This is Nathalie. Nathalie has been with us for 2 years this month. Always cheering us on and supporting the retail and kitchen in its various functions, Nathalie is an essential part of our team. ‘The people, the nutritious food, are some of my favourite parts of the Red Apron.’ Nathalie also believes the Red Apron to be a place that can inspire. ‘The values of community, sustainability, and thriving off of good ingredients are something to admire and to aspire to. There a...re many amazing and talented people here and it’s great have the chance to know them.’ Nathalie has seen the Red Apron through the various holidays and seasons and while the Spring and Summer months bring colour and vibrancy, the fall harvest is like no other. ‘The sheer abundance of ingredients, and they’re all so deliciously colourful, is really wonderful. It’s great to work with ingredients that have their own magic in the fall.’ Autumn holds one of Nathelie’s favourite memories. ‘One Halloween, a co-worker brought in some great masks and we all had such a good laugh!
