Hi! I haven't posted in here in some time because our pork is usually sold before I get a chance to list it! However... I have been able to get a date of June 24 because someone cancelled. With the processing plants closing it has created quite a back log and I believe, soon to be shortage, of pork at some point. That is why I have done my best to secure a date. Most places are booking into September right now. So if you are looking for a side of pork, please let me know... ASAP. The Red Wattle is one of the last true heritage breeds and grow for 12 to 18 months to reach their perfect weight. Unlike commercial hogs that are force fed in confined indoor stalls and reach a shipping weight at approximately 5-6 months. Our hogs are pasture raised with shelters and have never had any form of steroid, hormone or antibiotic. We believe in raising our hogs out in the open with fresh air and room to roam so there is never a need for any kind of medication. Just Sun raised pork. $3.25lb hanging weight (the weight before they start to cut) The cost of smoking and curing is an option and charged at the exact price we are charged in addition to the $3.25lb. It usually comes to an extra $35-$50 depending on what you would like done. A side is approximately 190lbs to 215lbs Side orders: You choose what cuts you would like, how thick your chops are/bone in or out, if you want roasts, if you want hams smoked, if you would like your bacon smoked, if you would like peameal bacon, vacuum sealed or freezer paper, etc. the options are plenty! If a side is too large for you, split it with a friend! Quarter Orders: We are unable to have custom cuts done for quarters so you will receive a variety of cuts in chops and roasts, bacon smoked in freezer paper. Please let me know right away if you are interested so I can let that date go to someone else if I don't need to ship a hog.

RED WATTLE PORK AVAILABLE: We have 1 side available for anyone who would like pasture raised hay/grain fed pork. If a side is too much, speak to a couple friends and split the cost of it, then just divide it with your group. The cost is $3.50lb hanging weight and then you choose how you would like it cut, if you would like the bones returned for soup or dogs (they are included in the cost of the hanging weight), etc. A guess at the hanging weight would be 200lb to 215lb for a... side. but it may be a little under or over that weight. $3.50lb hanging weight includes the hog, all processing fees we have to pay, the ear tag that is mandatory, taxes on the service, transportation to abattoir, and pick up if required or you are welcome to pick it up yourself. Extra: If you would like sausages made instead of ground pork, your bacon smoked, or choose to make peameal bacon from your pork loin, have your hams or pork chops smoked. You would pay the abattoir fee for that. Please let me know if you are interested. it would be ready in 90 days approximately, IF you wanted smoking done. Sooner if you didn't. Deposit of $100 required.
