On this Remembrance Day, we remember the service, sacrifice and dedication of soldiers from around the world who fought to uphold the most basic of human dignities. We also pay our respects to those who joined the Canadian forces but were denied the right to stay in this country after the world wars.

On nous demande souvent quel est notre plat le plus épicé. Révélation: il n'est même pas sur notre menu! On prépare notre fameux curry de chèvre (Goat Curry) à votre demande, avec des piments habanero québécois arrivés tout droit de Saint-Rémi. Ce plat demande une longue préparation de 6 heures, il vaut mieux donc généralement nous aviser le matin afin qu'il soit dans votre assiette juste à temps pour souper!

Tried to borrow some bread from my Punjabi neighbor... But he said he had naan.
We recently received a message from a friend of the family asking how she could support the restaurant and honor Babu Ji's memory. She asked if she could buy a gift card that we can then use to serve the more vulnerable in our community. Much of Babu Ji's inspiration came from the women he was surrounded by. First and foremost, his mother who he learned to cook from. His wife, with whom he built the restaurant from Day 1 (and many more, including his sisters and his daughter).... We're proud that our kitchen today is lead by a woman, Babu Ji's former sous-chef, Amanpreet Kaur. So much of who we are is thanks to the women we are surrounded by so it only made sense that we do the little that we can to support those in our community. On August 18th, the Darbar team visited the women's shelter Chez Doris and donated dinner to 40 women in our community that are going through a difficult time in their life. We hope to strengthen this new relationship with Chez Doris and continue to empower women in our community. - Nous avons récemment reçu un message d'une amie de famille qui nous demandait comment elle pouvait soutenir le restaurant et honorer la mémoire de Babu Ji. Elle a proposé de nous verser une somme que nous pourrions ensuite utiliser en solidarité aux plus vulnérables de notre communauté. Une grande partie de l'inspiration de Babuji est venue des femmes dont il était entouré. Avant tout, sa mère, auprès de laquelle il a appris à cuisiner. Sa femme, avec laquelle il a construit le restaurant dès le premier jour, et bien d'autres, dont ses sœurs et sa fille. Nous sommes fiers que notre cuisine soit aujourd'hui dirigée par une femme, Amanpreet Kaur, l'ancienne sous-chef de Babu Ji. Une grande partie de ce que nous sommes est due aux femmes qui nous entourent, il était donc naturel que nous fassions le peu que nous pouvons pour soutenir les membres de notre communauté. Le 18 août dernier, l'équipe de Darbar a donc rendu visite au refuge pour femmes Chez Doris et a donné un dîner à 40 femmes de notre communauté qui traversent une période difficile de leur vie. Nous espérons renforcer cette nouvelle relation avec Chez Doris à l'avenir, et continuer à valoriser et encourager l'empowerment des femmes de notre communauté.
Happy independence day y’all. While most of our peers in hospitality are marking the occasion with celebratory drinks and discounts, we thought we’d take the opportunity to talk about the current state of independence for some Indians. Punjab is in crisis. Often revered as the bread basket of South East Asia, the Punjab Agricultural University estimates that over 7,000 farmers have committed suicide since the onset of Punjab’s Green Revolution. Those that choose to die leave... behind grieving families, young children and elderly parents. Others resort to drugs and alcohol to deal with drowning levels of debt just so they can buy pesticide and remain competitive in global markets. This pandemic has disrupted supply chains and brought the wheat trade to a halt, all the more making it difficult for farmers to repay their debts. As a country and as a people, Indians have much to be proud of and reason to celebrate on days like this - rightfully so. We just believe productive celebrations of independence should, at the very least, include conversations about those we’ve left behind in our fight for independence. But most of all, Nusrat was a symbol of love and harmony across tense borders, often bringing Punjabis from Pakistan and India together to dance to his whimsical tunes.
As Punjab is vastly vegetarian, it has developed delicious ways of replacing meat, and paneer makes for a great source of protein! Saag Paneer is a classic Punjabi dish with curried spinach and delicate cubes of paneer made fresh in house. Poke your head into the kitchen on your next visit and you might find large blocks of paneer hanging from the ceiling in tightly wrapped cheese cloths. It's quite the sight! - Le Pendjab étant une région largement végétarienne, elle a dével...oppé avec le temps de délicieuses façons de remplacer la viande, comme le paneer, qui est une très bonne source de protéines ! Le Saag Paneer est un plat classique du Pendjab, composé d'épinards au curry et de délicats cubes de paneer frais faits maison. Lors de votre prochaine visite, si vous jetez un coup d’œil en cuisine, vous trouverez peut-être de gros blocs de paneer suspendus au plafond dans des torchons à fromage bien enveloppés.
