It’s the first #WeedWednesday of 2020! . The humble dandelion (Taraxacum officinale) is the first sign of spring and the first food for the bees . It’s name comes from the jagged lion toothed margins of the leaves. The leaves are tender and sweet during this time of year (but before there is any budding) and can be added to smoothies and salads! The flowers can also be eaten raw or processed into a yellow jelly that tastes almost exactly like honey!!! ... .
