PIQUETTE IS BACK ~ If we had one mandate this year, it was to make as much piquette as humanly possible. Well guess what? We did it.... Piquette is that wildly tasty baby wine you’ve been asking us for all year. A historic beverage, made by farmers centuries ago - piquette is the purest expression of a waste nothing mentality. This piquette was made with Seyval Blanc. After pressing our Seyval Blanc, we added salty Guelph water to the pomace to extract the flavours, acids and aromas left in the skins. After leaving them to macerate for 24 hrs we pressed again to make this 3.6% crusher. Seyval Blanc Piquette tastes like a cantaloupe and coconut sharing a hammock next to a freshwater ocean. This piquette is also available online now. Likely not for long though! ~ $500 from this release was donated to Indspire. Indspire is an Indigenous charity that invests in the education of Indigenous people for the long-term benefit of these individuals, their families and communities. In partnership with Indigenous, private and public sector stakeholders, Indspire educates, connects and invests in Indigenous people so they can achieve their highest potential.

Have you heard about our little wine project? It goes under the name ibi. We’re doing a little pre-release of our spring wines. This pack features 3 different wines. Each of them are made from hybrid grapes, grown on a single farm in Lincoln. Backus Farms has some of the oldest vines we know of in Ontario - the vines these grapes were harvested from range in age from 33 to 47 years old.... In this case you’ll get 2 bottles of white, 2 bottles of red (our first ever red!) and 4 cans of skin contact sparkling; méthode traditionelle. Be the coolest quarantined kid on the block! When these wines are released, they will go for $150 total but if you grab them on the pre-release you’ll get them for $125! Our way of saying thanks for helping us out during these scary times. We’ll be shipping these the 3rd week of April at the latest. Potentially earlier if our label people are on time. All pre-orders will ship out before the official release so y’all have the street cred of being first. Or should I say home cred? I guess we’ll see if we’re all still under lockdown then. Either way, you can still wave the bottles in your neighbours faces through the windows.

Hey Guelph! We've finally figured out how to sell bottles in person! Our good friends at Two Faces are helping us make it happen. We’re allowed to sell bottles to go at Farmers Markets. So, we’ll be setting up shop with some friends at the first Two Faces Farmer’s Market (20 Wilson St, Guelph) with bottles this Sunday, Dec 15th from 10am-4pm (that's tomorrow!). Along with our ciders there will be donuts, goodies from The Sage Soap Company, foraged fruits from Nicolas Querque...s and more. It’s nice doing things with friends. Come on out tomorrow and get your last minute shopping done!

New release day! Maréchal Foch Piquette. Maréchal Foch is one hell of a grape. High acid, with baker's chocolate bitterness, it's vibrant and lively. We were lucky this year to connect with Douglas Backus, a vigneron in Lincoln who had 47 year old Maréchal Foch planted. After whole cluster pressing the grapes we added the skins to the last of our apple water* from 2018. 24 hours later we strained them out to give us this gorgeous little thing.... Wild ferment, zero added sulphites. 48 cases produced. https://revelcider.ca/products/marechal-foch-piquette *We made apple water last winter by letting apple juice freeze outside. After decanted the concentrated juice, we thawed out the blocks of ice left behind.

We love working with all of the fruits Ontario has to offer. But sometimes, it’s nice to get back to basics. This week, we’re releasing two single varietal ciders. Each of them were raised from fruit harvested in 2018, fermented with our native microflora. Each of them are made of just apples. These single varietal ciders are our way of flexing a little bit. After so many fruit blends it’s nice to prove to ourselves that we can still make delicious ciders free and clear of an...ything but apples. Northern Spy Northern Spy are known for their floral, Gewurtztraminer-like aromatics, but here our native yeast add savoury notes and salinity providing a structural base for the floral fruit to lean against. Soft and plush, spring flowerbeds in bloom. Golden Russet Golden Russet finds it’s analogue in Riesling grapes, with lemon leaf, freshwater rocks, and the lightest splash of reduction. Hey friends, if you haven’t heard yet, we made a Piquette. It’s available online as of today with some dope duct tape labels. https://revelcider.ca/products/piquette Here are the details: We've fantasized about making something with a lower alcohol content for a while now. Piquette, which is naturally low abv due to it's unique production method, was intriguing to us for this reason.... Piquette is a vinous drink, made by adding water to grape pomace (the seeds/skins left over after pressing). Because these skins have a little sugar and acid leftover, it's possible to make a 'small' wine from them. Historically, Piquette was made by poor farmers for consumption by those who couldn't afford true wine. In our minds, there is a spirit of using every bit of your harvest in making Piquette. In keeping with this idea, we didn't just use tap water to make our version of Piquette. We used apple water for it. This is going to take a bit of explaining: When we make Soma (our pet nat apple wine), we put 4000L of juice outside to freeze in the winter. This concentrates the sugars, acids, and tannins in the juice, which allows our Pet Nat to get up to 11-12% abv. However after this process, we're left with giant blocks of ice. We melted this water, and realized it also had a tiny bit of sugar and acid left in it. In the spirit of using every bit of our fruit harvest, we decided to add grape pomace to this apple water to make our own version of Piquette. We picked up some second use Cab Franc skins from our pals at Burdock and let them macerate in this 'apple water' for 1.5 months. The result is a delightfully pink 'small' wine. At 4.4% abv, our Piquette is crying out to be chugged in the warm weather we're getting teased with these days. No added sulphites whatsoever. Keep Refrigerated, Drink Fresh.

March is Revel Cider's 4th anniversary and for the first time ever we are licensed to legally serve cider in our own space! As most of you know, Ontario's rules around cider are pretty crazy and we spend a fair bit of time reading laws and looking for loopholes. The strangest and most challenging was the 5 acre rule. So last summer, we rented 5 acres of orchard which allows us to sell cider online. A funny result of that lease, is it also allows us to (occasionally) pour cide...r at our warehouse. And we plan to do precisely that March 29th for our 4th anniversary. So come on down for our first ever legal party, aptly named Everything We Want to Do is Illegal. (Full disclosure, the name comes from one of my favourite books). Where is the Party? We'll be partying at our cidery (62 Dawson Rd, Guelph ON) from 7pm to 11:30pm on March 29th. This is a FREE event - no tickets necessary. The ticket link is only for bus tickets: For those coming from Toronto or Kitchener. How do I get there? For our friends in Toronto or Kitchener, we've arranged for a $15 round trip bus. Bus tickets are live in our bottle shop now.
