Just when we thought the season was coming to an end. Congratulations Michael Sloan for his Hole In One today on #14. He now has 4 Hole In Ones!

With the colder weather here, I thought everyone might enjoy a recipe that would be nice for a cold evening or afternoon. This beef chili is sure to warm you up. Serve with some cheddar cheese and sour cream on top to bring it to another level! Enjoy! Chanel CLASSIC BEEF CHILI 1 tbsp olive oil... 1 med. yellow onion, diced 1 lb lean ground beef 2 tbsp chili powder 2 tbsp ground cumin 2 tbsp sugar 2 tbsp tomato paste 1 tbsp garlic powder 1 tsp salt tsp pepper tsp cayenne powder (optional) 1 cup beef broth 3 lg tomato diced (with juices) 1 (16oz) can of kidney beans 1 (8oz) can of tomato sauce 1) In a large soup pot, put on medium high heat with the olive oil. Add the onions and cook for 5 minutes, stirring occasionally 2) Add the ground beef and cook until well browned (about 6-7 min) 3) Add the chili powder, cumin, sugar, tomato paste, garlic powder, salt and pepper and the cayenne and stir 4) Add beef broth, diced tomatoes, kidney beans and tomato sauce and stir well 5) Bring to a low boil then reduce the heat to medium low and let simmer slowly for about 25-30 minutes stirring occasionally 6) Serve as is or with some cheddar cheese and sour cream

Our very own Matt Coburn has been announced as the winner of the Ontario Golf Course Superintendents Association, Hugh Kirkpatrick award for 2021. The OGSA in conjunction with the Kirkpatrick family, originally developed this bursary program to recognize the leadership, commitment and accomplishments of Assistant Superintendent members of the OGSA. Congratulations Matt!

Continued thanks from the Bottle Drive Committee to all the residents who donate their empty beer, wine and liquor bottles and cans on every blue box day. Our volunteers just gave away another $1000! This time to the Strathroy Middlesex General Hospital Breast Screening Program through a bottle drive being co-coordinated by our very own Tara Reycraft! We have now collected over $13, 000 in empties and look forward to everyone’s continued support.

The RiverBend Bottle Collection volunteers have accumulated another $1,000! This time the funds raised were donated to the London Abused Women's Centre. Thank you to all the residents who continue to donate their empties on Blue Box day. Without the donations and the work of our volunteers this would all not be possible.

Congratulations to Georgeanne Grand for making a Hole-In-One on #5 today! She hit the perfect shot with a 7 iron from 92 yards! It’s her 3rd career hole-in-one and her 1st at RiverBend!

Once again the residents of RiverBend together with all of the Bottle Collection volunteers, have raised another $1,000. The recipient this time is the Byron Springbank Legion Br. #533 and it was made of just hours before Remembrance Day. Pictured are Bottle Collection chairpersons Dave Staines and Rebecca Herrington along with Legion treasurer Kathy and bookkeeper Peggy. They were so surprised and grateful. The donation will go into their general account to help pay the bills during the difficult COVID-19 slowdowns.

ACE!!!! Congratulations to Steve Hall for his Hole In One yesterday on #14!

With the cooler weather on its way soon, now is the time for all the monstrous zucchinis to be harvested from gardens, so I thought I would share my zucchini bread recipe. Enjoy! Chanel Zucchini Bread (yield 2 loaves)... 1 cup white sugar 1 cup brown sugar 3 eggs 1 cup vegetable oil 3 tsp vanilla 3 cups all-purpose flour 1 tsp nutmeg 3 tsp cinnamon 1 tsp baking powder 1 tsp salt 1 tsp baking soda 2 cups grated zucchini 1 cup chopped walnuts (optional) 1) Preheat oven to 325 and grease two 8x4 loaf pans. 2) In small mixing bowl combine the flour, salt, baking powder, baking soda, nutmeg and cinnamon and set aside. 3) In another large mixing bowl beat the eggs, oil, vanilla and sugars. 4) Add your dry ingredients to your wet. Fold in the zucchini and walnuts. 5) Pour into your loaf pans and bake for about 40-60 min. Inserted toothpick should come out clean or the loaf will spring back to a light touch. 6) Let cool in pans on rack for 20 min. Remove from pan and refrigerate until completely cooled.
