Venison. This is a beautiful, fresh backstrap medallion from a deer that my friend @austin_brubacher butchered yesterday. I’d like to claim the title hunter-gatherer now since I cooked this meal, but more realistically I’m just the scavenger who was gifted some meat. It was marinated overnight, pan-seared and turned out very tender and delicious.
