This week Chef Raz’s menu brings us back to Vietnam where his knack for complex heat, texture, and colourful plating hit centre stage. This dynamic and playful menu starts off with an ultra aromatic Phó, features the sizzling Vietnamese crepe, the Báhn Xèo, and cools off the palate with a Vietnamese coffee parfait. Even the dessert showcases his predilection for multilayered spice, with an interplay of heat from the chilis, sweetness from the condensed milk, and aromatics from the toasted sesame before finishing with the bitterness of the coffee. We are proud to launch Chef Raz Poisson’s first dine-at-home menu with Room Service this week.
