Let's talk a bit about beetroot shall we? Beetroot can help to improve circulatory functions, keep blood pressure in check, fight inflammation and improve digestive health. It's also a rich source of calcium, iron, and potassium. As such a superfood powerhouse it's no wonder that adding it to recipes is such a hit! Try out this Beetroot Raspberry Ice Cream recipe by @reclaimedhealthjayde and get your beetroot fix in the tastiest way! Ingredients... 1 can Rootalive coconut milk 1 tsp. Rootalive beetroot powder 1 tsp. raw honey optional 1 cup raspberries Sauce 1 cup raspberries 1 Tbs. chia seeds Topping Rootalive Cacao nibs Instructions In a high-speed blender, combine coconut milk, beetroot powder, raspberries and honey until well combined. Pour into a lined loaf pan or ice cube trays. Place in the freezer for a couple of hours to set. Once it has set, place back into the blender to create a creamy ice cream. Sauce On medium heat in a small saucepan, add in the raspberries until they are soft and bubbling. Turn off the heat and add in the chia seeds. Let sit for 5 minutes. Drizzle the sauce over the ice cream and top with cacao nibs.

Weekends are meant for spending time with loved ones and for indulging in some healthy treats. At least these Cassava Flour Donuts with Beetroot Icing make us think so! Whip up a batch this weekend and enjoy with family and friends Ingredients:... For 6 donuts 1 cup of Cassava flour 1/2 teaspoon of baking soda 1 teaspoon of baking powder pinch of salt 1 teaspoon of pumpkin pie spice cup of maple syrup cup of soy milk 1 tablespoon of applesauce 1 teaspoon of vanilla extract cup of pumpkin puree For the beetroot glaze: cup of vegan cream cheese 1 tablespoon of vegan butter - 1 teaspoon of beetroot powder (depending on desired color) cup of icing sugar 4-5 tablespoons of soy milk Instruction: (For 6 donuts) Preheat oven to 350 degrees F. Grease a donut pan. In a large bowl, sift together the Cassava flour, baking soda, baking powder, salt, and pumpkin pie spice. Stir in the milk, maple syrup, vanilla extract, apple sauce and pumpkin puree. Stir until well combined. Evenly divide the batter into the donut pan. Bake for 10 minutes or until a toothpick inserted in the donuts comes out clean. For the glaze: Step 1 Melt cream cheese and butter in the microwave (takes a few seconds), add beetroot powder and icing sugar. Step 2 Using a hand mixer or whisk mix until well blended. Add soy milk, 1 tablespoon at a time, until you reach your desired glaze thickness. Whisk again. Step 3 Once donuts have cooled a bit, dip them into the glaze and ENJOY!
