My word making clear ice at home is so satisfying to look at. Oh and so is a 100% Vancouver Island Old Fashioned! Word to the wise, @shelterpoint flagship Single Malt makes an incredible Old Fashioned and has honestly become our default whisky for the drink. A true pleasure on a chilly night. 60 mL (2 oz) Whisky / @shelterpoint Artisanal Single Malt... 7 mL (1/4 oz) 2:1 Simple Syrup 2 dashes Aromatic-ish Bitters / @rootsidemixers 2 Cherry garnish / @luxardoofficial Add ingredients to an ice filled mixing glass and stir over ice until chilled. Strain into a rocks glass with a giant piece of clear ice and garnish with two cherries. Enjoy infront of a fire on a chilly evening.

What a stunning drink from @nickassaur !! --- Pot Valiance . 2 oz. Dutch Courage aged genever (@devinedistilleryandwinery) 3/4 oz. Esquimalt Dry Vermouth (@esquimaltwine) 1/2 oz. Bitter Bianco... 2 dashes Rootside Cascadian bitters (@rootsidemixers) 4 oz. tonic water Ice spear from @kodamaiceco . Devine Distillery's Genever is perhaps my favourite spirit that they make, and ever since I first had a chance to taste it over two years ago, I had wished for an aged version of it to try. Then out came Dutch Courage, which was exactly that: a barrel-aged version of their genever! Although it came out in 2019, I wasn't able to secure a bottle from their first batch. However, they were kind enough to send me a bottle from Batch No. 2. . On the nose, sour apples, green grapes, sour cherry juice, orange peels, and the tiniest hint of something not unlike incense. This is bright, floral, and tart. On the palate, the aging has given way to notes of warm caramel, while giving a slight butterscotch essence on the exhale. Although it has been aged, much of the spirit remains bright and youthful, though not in an unpleasant or harsh manner. . For the drink, a white negroni meets a G&T and a little bit of age. I've always enjoyed Devine's genever in a simple genever and tonic, but the dry vermouth and bitter bianco do nicely to add some additional complexity and bitterness. Esquimalt'sdry vermouth and bitter bianco also offer a touch of sweetness, which allows the warmer caramel notes of the aged genever to come easier to light. See more

Well, frankly Rosehips are really high in pectin and pectin really likes to gel like jam in alcohol so the usable volume we got from this batch was really really small given how muc...h we tried to make. From this batch, I've got like 40L of boozy Rosehip Lemon Peel jelly sitting in the warehouse right now that I need to find a use for... We're working on some ways to try and break that pectin down, but we currently have our sights set on some other new and exciting things coming out soon so this one might just get archived for the foreseeable future. But today’s workday ended with snagging a bottle of @arbutusdistillery Hibiscus Vodka which led me to thinking about Trinidad (can’t go) and the sorrel we make at Christmas time (Trini word for hibiscus). That led me to gather some goodies around the bar fridge and pour this beauty! . A light twist on a Trinidad Cobbler - made with: - @arbutusdistillery Hibiscus Vodka - @plantation.rum (not pouring my Angostura 1919 into this - I drink her neat) - Michaela Cream Sherry - blood orange and lime juice - Demerara simple - @rootsidemixers Orange Bitters (stirred in) & lots of @rootsidemixers Aromatic-ish Bitters over top .
