Cinnamon Raisin Nut Bread I had so much fun making this bread full of raisins, pecans and walnuts!!! FUN FACTS:... There are two ways people pronounce pecan no one agrees which is the correct pronunciation. It takes 12 years for a pecan tree to reach maturity and begin producing nuts and that Pecan trees lives for 300 years. Raisin colors vary by drying process. For example, a dark purplish/black raisin is sun-dried. A light to medium brown raisin is mechanically dehydrated in special drying tunnels. A golden to bright yellow raisin is mechanically dried and treated with sulfur dioxide to retain color and a green raisin is dried by air in adobe houses. California discovered the commercial potential of raisins quite by accident. In 1873, a freak hot spell withered the grapes on the vine. Butternut Squash Risotto with Sage Brown Butter FUN FACT: Many people think risotto is a type of pasta (I was one of those people btw).... In its most simplest form, risotto is really just rice (specifically short-grain & high-starch rice) cooked in a pan of broth & flavourings (meat, fish or vegetable based). Stirred during this cooking process the grains’ starches are released and the dish develops a full-bodied flavor with a pleasing, thick, creamy consistency. It also happens to be one of the most common ways of cooking rice in Italy. MYTH: You can’t make risotto without wine. First time making the ever popular Eggs Benedict (minis the ham)!! I have always been a little reluctant on making Hollandaise sauce for fear of it splitting. On my third attempt (first one split, second was too thin) I gained the confidence (and patience) to balance the flavour and texture :) I typically find Eggs Benny too rich & the hollandaise sauce overpowering BUT by making it from scratch, I controlled the the consistency & amount ... FUN FACT: The origins of how Eggs Benedict started are numerous but my favourite one is below: There have been many Benedicts who have tried to claim credit for the invention of the dish, but they are all frauds. A benedict was slang for a newly married gent who had been single for a very long time. Many of these"benedict" did not take well to married life and often sought refuge of strange beds and bedfellows. It is for them that the dish was named. In an interview in The New Yorker magazine in 1942, Lemuel Benedict, a retired Wall Street stock broker, said that he had wandered into the Waldorf Hotel in 1894 and, hoping to find a cure for his morning hangover , ordered "buttered toast , poached eggs, crisp bacon and a hooker of hollandaise." Oscar Tschirky, the maître d'hôtel, was so impressed with the dish that he put it on the breakfast and luncheon menus but substituted ham and a toasted English muffin for the bacon and toast.
