Northern Dazzler is from Asahikawa, Hokkaido where they get similar weather like Alberta (and a unique coincidence - Hokkaido and Alberta are official twin provinces, recognized by both governments since 1980!). Kokushi Muso has been known for making dazzling dry, solid back bone, umami laden sake for many years. True Izakaya style to say the least where people in Asahikawa warm themselves up drinking this hot sake with izakaya food. Delicious pairing with Hokkaido uni, Hokkaido scallop, grilled fish, yakitori and much more. Masumi AKA Junmai Ginjo Yamahai: This may well be one of the best and most versatile sake picks to celebrate the Lunar New Year! Whether you go traditional or with any kind of dishes, here is why we recommend it! AKA "" (red in Japanese) on this gorgeous label is the vermillion red used in official seals throughout Asia since antiquity and the same red has been used in traditional Japanese lacquer-ware paintings for hundreds of years. This yamahai style sake can be enjoyed... starting chilled, then moving on to enjoying it warm with fish, dumplings, whole chicken, pork belly, ribs and deep fried dishes. It has a plum-like stone fruit quality with lactic acid on the nose. This lactic acid continues through the palate and is accompanied by fruitiness, a nice tangy acidity and umami. The yamahai method is the reason why the lactic features delightfully. It relies on the natural production of lactic acid which requires a longer fermentation period, resulting in superb depth and complexity. Easy pairing with heartier foods and, especially if you drink it warm, the warmth of it almost melts away the oil in food, leaving your palate fresh for the next bite. We often get asked which premium sake is best for drinking warm. We recommend drinking premium sake chilled especially "dai ginjo" or "ginjo" that has a distinctive fruity/floral notes. However, check out this AKA if you would like to see how this sake can be enjoyed warm as well as chilled! This food-friendly AKA has a mild fruity note and enjoying it warm would bring out its savory/earthy characteristics. The umami becomes more round and expansive also. We hope many of you in Canada have streamed the sake documentary film "The Genealogy of Sake" about the Four Kings of Sake from the Noto Toji Guild over a glass or two of sake this weekend! You have one more day to stream and watch this great film for free - thanks to The Japan Foundation, Toronto! https://jftor.org/event/genealogy-of-sake/ This bottle, Kaiun "Hase" Sake Legend Daiginjo is mentioned in the movie, which describes how tradition and skill were passed down to t...he current Toji (master brewer) of @kaiun.doishuzojo Minori Shinba. This flagship sake was originally released in 1986 by Kaiun with then-Toji, the late Shokichi Hase. Here is a summary of what it says on the box of this bottle.... "The late Shokichi Hase continued brewing "Kaiun Sake" from 1968 until 2009. In 1950, he started working under a Toji at a sake brewery in Shizuoka after his brother in law advised him to work with the strictest of bosses. This ended up being sage advice which he heeded. He worked with a person known for being fastidious, with the understanding that if he could work under a strict boss, he would learn so much and be fine working at any other brewery. He worked under this Toji for 9 years learning the basic skills and then became the head of a brewery in Wajima. As Toji, he brushed up on his skills for 7 years before he became Toji of Doi Brewery (Kaiun). It is said that people of Noto work with precision. Now the skill and mindset has been passed along to his apprentices." It has become quite common to see a Toji's name as a product name these days but back in 1986, it was unheard of. It's one of the examples of Mr. Hase as a trailblazer in the sake industry. The label, with Mr. Hase's own signature, says "Noto Style Kaiun Daiginjo Shokichi Hase." One aspect of the current label differs from the original; it used to say "" - Saku- basically means "Made by", however, since Mr. Hase passed away in 2009, the label now says "-Den- meaning "Convey". The current Toji Shinba, once an apprentice to Mr. Hase, took on the enormous task of continuing to brew this sake ever since Mr. Hase's passing. Shinba-san's talent and skills are impressive and this sake has continued to win numerous awards, including the best award at a recent prestigious sake contest in Nagoya. Houraisen Beshi- Tokubetsu Junmai. Gentle notes of lychee and white flower on the nose, rounded creamy umami on mid palate with almond approach leads to subtle clove and white pepper finish. If you ask sake lovers what their "go to" Tokubetsu Junmai sake is, the chances are they will have something in mind. If you are looking for your own "go to" in this category, look no further than here - a versatile Beshi Tokubetsu Junmai (and a great price point!).Tokubetsu means "Sp...ecial" and Tokubetsu Junmai stands between the Junmai Ginjo and Junmai sake categories. In order for sake to be classified as a "Tokubetsu"the sake needs to be something special and, the most common special feature is that the rice is polished to below 60%. Beshi is 55% (meaning 45% polished away), and, considering the rice polishing ratio in Junmai sake category of 50%-60% can be called "Junmai Ginjo", this is pretty good! You get to enjoy some characteristicsof Junmai Ginjo such as elegant and fruit/floral-forward style and earthy, savory style of Junmai simultanously yet in a nice and complex way. This is a solid one to pair with a variey of dishes. We often encourge people to focus on each product's dynamic and character rather than focusing on rice polishing rate, but this time it is worth noting! @sekiya_houraisen_sake has been successfully growing local rice by teaming up with many of local farmers, using Yumesansui and Chiyonishiki, for quite some time now. Seaside Blue just arrived! One and only @mihoimada of Fukucho makes this very special limited edition Seaside for summer only! Compared to the beloved original Seaside, the total acidity level is a bit higher and the soft citrus & green apple goes a long way with just the right level of fruity and herbaceous notes and umami are beautifully balanced together. Great timing to grab a bottle as we expect hot summer weather. It goes extremely well with shellfish/seafood, ...and our fav pairing is salad or pasta dishes using local tomatoes and greens. The prestigious Miyasaka Brewing Company was founded in 1662 and it is where the famous sake Yeast No. 7 was discovered over seventy years ago! Today, Masumi is focusing on Yeast No. 7, and highlighting its evolution and versatility, with a new sake series that we are certain you are going to LOVE.... We had a very special launch party planned for April but it was postponed due to the pandemic. However, rest assured you will be hearing much more from us about this prestigious sake brewery.
