KITCHEN THROWBACKS - Volume 4 - Cheeseburger Pie What is this? Why, it's everything you need to craft an old-school Cheeseburger Pie, of course! This cheesy throwback version of a meat pie is the ultimate comfort food and is perfectly complemented by a side of salsa or ketchup.... Serves 6 Ingredients: 1 cup (250 mL) plus 2 tbsp biscuit mix 1/4 cup milk 1 tbsp vegetable oil 1 medium onion, chopped 1 garlic clove, minced 1 lb Ontario ground beef 1 tbsp Worcestershire sauce Salt and pepper to taste 2 medium tomatoes 2 eggs, beaten 1/2 tsp oregano 1 cup Ontario cheddar cheese, grated Method: Preheat oven to 375F (190C). Combine 1 cup biscuit mix and milk into a soft dough, kneading gently 5 times on a lightly-floured surface. Roll out into a circle to fit a 9 pie plate. Trim and flute the edges and set aside. In a large skillet, heat oil and sauté onions and garlic until soft. Add beef and brown lightly, then drain excess fat. Stir in remaining 2 tbsp biscuit mix, Worcestershire sauce, and salt and pepper to taste. Add to pastry-lined pie plate and arrange tomato slices on top. Combine egg, cheese and oregano and spoon evenly over tomatoes. Bake about 30 minutes. Serve immediately with salsa or ketchup. You're welcome.
