VANILLA STRAWBERRY RHUBARB CRISP We LOVE this recipe from @ambitiouskitchen, it’s simple, delicious and GF and can be DF too! Ingredients... For the crisp topping: 1 cup gluten free oats 1/2 cup gluten free oat flour 1 teaspoon cinnamon 3/4 chopped pecans 1/4 cup coconut sugar (or brown sugar) 1/4 cup coconut oil, melted (or butter) For the filling: 2 pounds strawberries, hulled and quartered 5 stalks rhubarb, diced into 1 inch pieces 1/2 cup coconut sugar (or brown sugar) 1/2 teaspoon vanilla extract seeds from 1 vanilla bean 2 tablespoons gluten free oat flour Instructions Make the topping: In a medium bowl, whisk together oats, oat flour, cinnamon, pecans, coconut sugar and coconut oil; set aside. Preheat oven to 375 degrees F. Grease a 9x9 inch baking pan with coconut oil (or generously coat with cooking spray). In a large bowl, add coconut sugar, vanilla bean, strawberries, rhubarb and oat flour; toss a few times to evenly coat the fruit with the sugar and flour. Pour into prepared pan and evenly sprinkle the topping over the fruit. Bake for 30-35 minutes until the filling begins to bubble and the top is golden brown. Cool for 10-15 minutes before serving. Top with your favorite ice cream, if desired. Serves 9. RHUBARB! This week we are going to share some delicious recipes for this amazing spring VEGETABLE (wait, what?! Yes you read correctly, it is a vegetable although often used as a fruit in culinary dishes). RHUBARB COMPOTE 2lbs fresh rhubarb, roughly chopped... 1/2 cup water 3/4 cup cane sugar Thinly shaved peel of 1/2 lemon 1/2 tsp vanilla extract (or vanilla bean paste) Directions Combine all ingredients (except vanilla) in pot. Heat to medium-high and stir occasionally until rhubarb begins to break down completely. Remove from heat and stir in vanilla. Allowed to cool and store in an airtight container in the fridge. Enjoy with yogurt or anything your heart desires! (We will have rhubarb available for sale in our store when we open on June 1, see you then!)

Beautiful day to plant garlic!
The new baby chicks arrived and got settled in this morning with the help of Devin, Eve, and Kai. The kids were so helpful ensuring each chick took their first drink of water, a few bites of food and had access to one of the the heat lamps to stay cozy. One special chick was born with only one eye, we named her one eyed Jo or Jolene for short. These girls will start laying eggs in the spring.
LAST DAY OF THE SEASON We can’t begin to thank our amazing community enough for this fantastic season. 2020 has been interesting to say the least and we are so grateful for everyone’s continued support. We hope that you’ll stop by today so we can say farewell for the winter.
