Sometimes, with tomato season comes blight season. A lot of our tomatoes are showing signs of the dreaded blight this year, and will rot long before they ripen. But wait! There are things you can do with green tomatoes while the spots are still small. It turns out Fried Green Tomatoes are more than just a movie title. Fried Green Tomatoes Ingredients:... - as many green tomatoes as you want (the plate pictured was just enough for my hungry family of four) - salt to taste - flour or gluten free flour blend, about 1/2 cup - seasonings of choice (I used garlic powder, pepper and thyme) - 1 egg - corn meal, about 1/2 cup - oil for frying Directions: Cut tomatoes into 5 mm slices, removing any blighted spots. Salt well and leave for about 15 minutes. Rinse salted tomatoes and pat dry with a clean tea towel. Prepare three bowls: flour (or a gluten free flour blend), seasoned with whatever you like: garlic powder, thyme, pepper; an egg beaten with splash or water (or flax egg); and cornmeal with a dash of salt. Heat up a frying pan and add a high-temp oil that is good for frying (sunflower or grapeseed) on medium heat. Take each dried tomato slice and dredge in flour, dip in egg and then in cornmeal. Add to frying pan when hot; don't overcrowd pan. Flip when lightly browned. Remove to a plate and serve!
