So I had a night off this week in the kitchen, and was treated to dinner by my favourite Dick - Reg Labonte. He whipped up these AMAZING dry rubbed, slow roasted, barbecued chicken wings. By far the best wings I have ever had. Served them up with some corn-on-the-cob barbecued in herbed garlic butter, and some good ole’ Manly Macaroni Salad. All stupid easy and crazy tasty. Cook. Hey Dick - It's Mothers Day. Stuck for an idea for dinner that doesn't require a lot of work or time?? Show yo mama some love with this quick but delicious seared salmon with a cucumber, cream cheese and cilantro topping. Restaurant style meal in minutes from the comfort of quarantine. Grab yourself some salmon, rinse with water, pat dry and then sprinkle with some sea salt. Peel and chop some fresh cucumber (about 1 1/2 Cukes) and chop a fistful of fresh cilantro. Finely ...chop up a medium sized shallot as well for good measure. In a large frying pan, heat up some coconut oil and then sear your salmon for about two minutes per side. They should be a bit pink still in the centre. Remove from pan and cover with foil while you make the sauce. Using the same pan, quickly sauteé your chopped shallot until it starts to soften. Now reduce the heat to medium and add a cup of cream, a cup of milk and a brick of cream cheese pulled apart into small pieces. Stir constantly until the cheese is melted. Toss in your cucumber and cilantro, along with a few shakes of dill, and salt an pepper to taste. Allow this to simmer for about 10 minutes, then carefully add the salmon back to the pan. Allow the salmon to poach in the sauce for another 10 minutes or so and voila. You're done. Serve the salmon over a bed of rice or better yet, some quinoa, top with more sauce and you're an instant rock star. You're welcome. See more
