Finally completed this little idea of mine! Just dropped my first shipment at Sheshu's Pantry, just opened up on the West End by Wapiti Bean Co. These are my Christmas Break Ornaments.... They're NOT HC Bombs They're meant to be smashed and enjoyed with a cup of coffee. Just in time for the Suzanne Sandboe Exhibition opening tomorrow at the Grant Berg Gallery! I dropped off some bars because I figured Grant could use some more for the upcomming Vegas Nights... but this is a perfect match! I want to show you a thing of beauty. This is Mike's work. Every time I see these caramels so perfectly cut and so perfectly linned up, I am delighted by the symmetry. He does this WAY better than I do. Mike has worked in professional kitchens for over 20 years and I really appriciate his experience. I know more about chocolate production than he does but I'm feeling that he will surpass me in skill in the not too distant future.... Alert! New flavour for our Global Citizen Bar. I realized that I had a bunch of Dark Chocolate bars made and wanted to come up with some more Milk Chocolate ones. This is our Trail Mix Bar. Was inspired by @the_chocolatelab to make my own #chocolatespraybooth and hopefully save a bit of coin. It's something that's needed when using a spray gun to colour chocolate molds. It keeps the studio (and my glasses) from getting covered in a fine layer of coloured cocoabutter. I'll post more as it progresses....and I fail..and I regroup...and adjust...and hopefully figure it out!... Wish me luck! First test has happened and the cocoabutter was caught in the filter so now to cut up the tri-fold board. @ Grande Prairie, Alberta
