Dill Pickle Soup - Gluten Free Who loves dill pickles? I do! I do! So does my husband. We always have them in the fridge. Klassen brand rocks! As the cold weather is now setting in here in Canada...Burrrr...We are going to be pulling out the soup recipes. This one sounds super weird...But try it...You might like it...... Enjoy with a nice toasted bun or some crackers. Ingredients: 4 cups vegetable broth 2 medium russet potatoes, cubed 1 cup carrots, cubed 1 cup dill pickles, cubed 1/2 cup brown rice flour 1/2 cup sour cream or yogurt 1 cup dill pickle juice 1 teaspoon Old Bay seasoning Pinch of salt and pepper 1/2 tsp garlic and onion powder 1/8 teaspoon of cayenne pepper opt 1 tablespoon Worcestershire sauce opt Fresh dill or dried dill pot Instructions: In a medium size pot heat up the broth then add carrots, potatoes and spices. Cook for about four minutes. In a small mixing bowl, add the sour cream and the flour, whisking to make a paste. Slowly add 1 cup of the hot broth, whisking until smooth and creamy. Slowly pour the cream mixture into the cooking pot while whisking until smooth. Stir in the pickle juice and then pickles. Cook for four minutes on low/med until vegetables are the way you like them.
