A cut onion releases a gas called Propanethiol S-oxide, and when mixed with certain enzymes in the onion, it creates a sulfur gas that irritates the eyes and triggers your tear glands. Here's a tip: keep your onion refrigerated! Cold onion doesn't release that chemical compound as easily as it would if it were warm.
