Homemade Hot Apple Cider Recipe: 6 apples quartered... 1 orange peeled and quartered 1 inch ginger sliced 1/2 tbsp whole cloves 2 cinnamon sticks 1/4 c maple syrup or alternative* In a crock pot add all ingredients but sweetener. Cover with water but leave 1-2 inches at top. Turn crock pot on high. Simmer for 2 hrs, when apples are soft mash a little against side of pot to release more flavour and turn to low simmer until desired flavour is reached. Using a strainer pour contents through and into another serving jug. Roasted Garlic Kale Caesar Salad Ingredients Dressing... 1 Head of garlic 2 tbsp Dijon mustard cup extra virgin olive oil Juice of of a lemon tsp Salt Fresh ground black pepper Salad 1 bunch of kale leaves, stemmed and chopped cup pumpkin seeds Grated Parmesan cheese Roasted chickpeas (optional) Directions Preheat your oven to 375 F. Slice off the top of the head of garlic, exposing the top of each clove. Drizzle the garlic with olive oil and wrap in aluminum foil. Bake in the oven for 35-45 minutes, until the garlic is soft. Remove the garlic from the oven and let cool a few minutes before peeling away the foil. When garlic is cool to the touch, squeeze the soft cloves out of the garlic skin into a food processor or blender. To the roasted garlic add the oil, lemon juice, mustard and salt. Blend together until smooth. Add dressing to kale leaves, massing the dressing into the chopped leaves. Mustard Greens Pesto This recipe makes A LOT of pesto, so make sure to have some jars handy for gifting! Mustard greens are a bit spicy, like arugula, but actually comes from the cruciferous family - the same as broccoli, cauliflower and brussel sprouts.... Ingredients: 12 cups (packed) mustard greens, de-stemmed and washed 2 heads of garlic (or to taste) 1 cups extra virgin olive oil 1 cups almonds 1 cup grated Parmesan cheese 1 tsp kosher salt juice from a lemon (3-4 tbsp) Directions: Add all ingredients to a food processor (or blender) and blend until a smooth thick paste forms. Store in the fridge for up to 5 days, with a thin layer of olive oil on top. Freeze pesto in ice cube trays for 2 hours, then pop them in a bag in the freezer for future use. Uses: Spread for sandwiches. Dips for veggies. Add flavor to meats. Dairy free Tuna Mac & Cheese Recipe for Cheeze Sauce: 1 cup cashews (soak for 6-8hrs) 1 lemon juiced... 2 garlic cloves 1 tsp onion powder 1 tsp salt 1 tbsp miso 1/2 cup nutritional yeast 2/3 cup veggie broth or water Soak cashews, Drain and rinse. Next, add to blender with all other ingredients. Blend until creamy. Boil pasta to liking. Drain and rinse. Add sauce to pasta and warm. Add your protein at this stage (tuna, beans, lentils, cooked chicken, etc). Serve on a bed of greens such as arugula or spinach. Brussels sprouts with sweet chilli sauce Recipe Roast Brussel sprouts under just tender.... Meanwhile, make sauce: 1/2 cup rice wine vinegar 1/2 cup coconut sugar 3-4 Tbsp sambal oelek (or sriracha as a substitute if unavailable) 1.5 tbsp arrowroot flour 3 tbsp water In a saucepan add rice wine vinegar + sugar + sambal warm. In a separate bowl mix arrowroot flour and water and mix until dissolved. Add to saucepan and bring up to heat - not boil but hot until the sauce begins to thicken. Toss the sprouts in sauce and bake for another 10min at 400 if you wish to have coated sprouts, otherwise use the sauce as a dip! Napa cabbage miso stir fry Ingredients: 2 onions, diced @cookstown_greens 2 cups chopped napa cabbage #zephyrorganics ... 1 cup chopped rapini #toptomatofoods 1 green onion, thinly sliced @blackashgardens 1.5 tbsp miso 1lb ground beef - we used @coldcreekstock available on our market (or ground meat alternative) Directions: Heat 1 tsp olive oil in a pan and add ground beef. Add 2 tsp of miso and sauté until cooked. Set aside. At the same time put on a pot of rice to cook. In the same pan used to cook the meat add diced onions and cook for 2-3 minutes until translucent. Add 2 cups of chopped napa cabbage. Add 1 tbsp of miso and mix into vegetables. Cook for 5 minutes until cabbage is soft. Add 1 cup of chopped rapini and sauté for another 2 minutes. Add meat. Serve on rice and add sliced green onions to taste. Spaghetti squash Alfredo! Cut squash in half. Put 1 tbsp butter into each half and season with salt/pepper. Place both halves on baking tray cut side up and cover with foil. Bake for 35-40min on 350.... Meanwhile, in a blender place 1 cup cashews, 1/3 cup water, 1 Tbsp miso, 1/4 cup nutritional yeast, 2 garlic cloves, 1 tsp onion power and tsp salt and blend until creamy. Add more water to thin out as needed. Once squash is tender, remove from heat and using a fork, gentle peel away the flesh from the skin, and toss together with the juices from the butter/steam. Dish out the flesh into a bowl, add the cashew Alfredo sauce and mix to combine. Lay some spinach leaves into the empty squash skins then add the Alfredo/squash spaghetti back into skins and garnish with green onions.
