Have you ever seen the plates or bowls that were used about 30 years ago? They are about half the size of the dishes we currently use. Have you ever noticed how at restaurants, those plates and bowls are even bigger? Why do we associate a portion with the size of our dishes and why is portion control so important?... Portion control basically ensures we aren’t over-eating. By controlling the amount of food we are consuming, we are in control of our nutrient intake. We can provide our bodies with proper nourishment without over-indulging. A portion is defined as the amount of food that one puts on their plate for a single meal. We often serve ourselves quantities that we perceive to be equivalent to a single portion, when in reality it might be multiple. Basically, portion control involves eating a healthy assortment of a variety of foods. Some tips to help with portion control: 1. Use a scale to weigh out your food. This is the most accurate way to ensure portion control. 2. Use the hand method, seen below. 3. Use a smaller plate or bowl. 4. Eat a high protein, high fibre diet. This will ensure you are full after each meal and snack.

*Cooking with Carla* You can use frozen zucchini in this recipe and the muffins freeze well. I use almond flour. Simply For Life's Chocolate Zucchini Muffins INGREDIENTS cup cocoa powder... cup flour tsp organic baking soda tsp salt 3 eggs cup oil cup organic honey 4 tbsp natural nut butter such as almond (or apple butter in case of allergies) 1 tsp pure vanilla extract 1 cup finely shredded zucchini (squeeze out excess moisture) DIRECTIONS Preheat oven to 375F degrees. Combine cocoa powder, flour, baking soda and salt in a large bowl. Set aside. In a medium bowl mix eggs, oil, honey, almond butter and vanilla until incorporated. Pour the wet mixture into the dry ingredients and mix with a spoon or spatula until just mixed. Fold in the zucchini. Place muffin liners in a mini muffin pan and spoon the mixture into each so they are almost full. Bake for 12 to 15 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow cooling before serving or freezing. Makes 12 muffins.
